Summer Reminders

Before I begin let me just say thanks to everyone who visited the blog yesterday! We  reached an all time high of page views!

For me, certain things remind me of summer (and taunt me with how close it is. LOL). When summer time comes my house gets a certain smell….like the outdoor air is circulating throughout it. So familiar and comforting. Today’s breakfast really made me think of summer….especially summer vacation. Today I have the day off and was able to make a breakfast that I usually have to save for the weekends because of lack of time. So I was very excited this morning when I came down stairs to my overnight PANCAKE mix!

Super easy and cheap! Know lousy store-bought mix required and there is a lot of room for variation:

Pancakes for 1

~1/2 cup flour ( I use KIng Arthur whole wheat)

~1/2 cup milk ( I used regular milk…but soy, almond, or any other kind would work just as well and probably give it a really nice flavor)

~2 tsp baking powder

~lots o’ cinnamon

~add a sweetener if you like sweeter foods (I like a bland pancake so I can jazz them up with toppings)

~you can add an egg, cottage cheese, yogurt, or protein powder  if you like to bulk them up a bit if you like or fruit, nuts, and/or chocolate to the batter while they are cooking!

Mix all ingredients until completely combined. I usually make these the night before so the mix has a chance to thicken up a bit (sometimes have to add more liquid the next day), but you could definitely make them in the morning. I would suggest just adding a little bit of liquid at a time if you are making them the day of , so they don’t become to watery. Then, you heat up a ban until its good and hot, spray generously with cooking spray, and pour a little bit a of batter at a time. I usually make six or seven little pancakes, but I am sure you could get away with three medium to regular sized ones.

After that, these pancakes are basically a fresh canvas, ready for you to put anything on them. I have tried: blueberry syrup, fresh bananas, walnuts, Chobani yogurt, almond butter, peanut butter, and countless other topping combos. Today, however, I tried a topping that I often enjoy for a snack and sometimes desert:

OMG! This was amazing! Tasted like fresh Pancakes a la mode! I will definitely be making this breaky again….SOON!

This soft serve is so easy…..both to make (one ingredient!) and to enjoy (it tastes delicious with everything)! This along with the pancakes +an omelet+ a glass of ice cold milk=PERFECT!
