UPDATE! this post was supposed to go up A LOT earlier today but our internet went down just as I was posting. Sorry everyone!
That pretty much describes my breakfast. I woke up this morning with a strong hankerin’ (love that word lol) for some oats.
So oats it was!
In the mix:
~1/2 cup oats cooked in 2 cups of water <- double the amount of water for super creamy voluminous oats
~fresh hand picked (by muah) strawbs
~dried mulberries, cacao nibs, cherries, goji berries, and mulberries
A big, fruit filled bowl to be exact. For those of you who don’t eat oats because you think they are tasteless and bland, don’t be so quick to write them off because when you top them with fresh summer fruit, nuts, or whatever other toppings suit your fancy, you not only get and awesome breakfast but a super tasty meal!
With my awesome oats I had a huge Green Monster.
Now, despite its off green color and odd look, this smoothie was icy, refreshing, and very filling ! If you haven’t tried a green monster yet , all you have to do is get by the appearance and then you will be able to enjoy a wonderfully fruity smoothie that contains fresh greens and any other nutrient dense ingredients you choose to add. I make mine using spinach and have slowly been able to add more and more each time as my taste buds adapt to the taste. Its a great way to get in veggies at the start of your day ( or any time for that matter).
I picked up my employing handbook from my JOB after breakfast! I start next Tuesday and can’t wait to be making some monaay.
For lunch I recreated the sandwich I had for lunch the other day when I went out with my friends.
Filled with roasted red peppers, creamy avocado, grated carrots, thinly sliced cucumber, spinach, Dijon mustard, red onion, and tomato. Very summery if I do say so myself. I love eating foods of so many different colors.
Along side I had some Lemony Lentil soup and an Orange Ginger Siggi.
My oh my is that yogurt good. With little orange slices in it, it tasted like heaven! May just have to grab another one for a snack later. Yummm.
Going to get ready for my softball game!
PS: I tried to more items from Betty Lous! The Chocolate Dreams Just Great Stuff bar reminded me of the smacker I tried the other day, in appearance and taste.
The inside was not too sweet but went extremely well with the sweetness and creaminess from the chocolate coating. There was a slight banana taste as well. Its hard to believe these great tasting bars have veggies in them such as kale, spinach, and broccoli!
I also tried the Coconut Macadamia Ball!
So good. Very buttery and smooth. I love coconut so this one was perfect for me.
