Beans being a star of dinner tonight and the teen being MUAH!
My mom and I made an awesome dinner tonight. We got a recipe for fish paupiettes (rolled fish) from the new clean eating book and I must say this is one of the best homemade fish dishes I have ever had. I absolutely loved it and could have eaten the entire three pieces I think! We used halibut, but any mild, white fish would work, and then rolled them up with a mixture of whole wheat bread crumbs, fresh (from our garden) basil, Dijon mustard, and toasted almonds.
The result was a perfectly cooked piece of fish with a moist, doughy filling that was sooo TASTY! Much better than I thought the recipe would turn out.
On the side we had some veggies (broc, asparagus, and green beans) and some Great Northern Bean Mash<- awesome side that adds some major protein and replaces mashed potato’s with awesome flavor and nutrients!
Heres the recipe we created:
~1 small onion
~1 large or two small loves of garlic
~1 can great northern beans or any small white beans
~rosemary, thyme, salt and pepper
~ chicken broth
Saute the onion and garlic in a bit of oil and chicken broth until translucent. Add beans and a dash more chicken broth (not too much though or it will be too watery) and cook until all heated through. Put entire mixture into a food processor with a hefty amount of rosemary (makes the dish), a sprinkle of thyme, and salt and pepper to taste. Process until smooth and serve either hot or cold. I like it nice and chilled!
