My Fave Go-to Meal

I have mentioned this meal many many times before~!

Have shown numerous pictures of it:

And I am finally ready to share my all time favorite meal recipe ever! I never ever get sick of this chili and make it all the time…usually once a week or once every other week.

Healthy Helper Chili

adapted from EDBV’s Sweet Potato Lentil Chili

  • 1 huge sweet potato, peeled and cubed
  • 1 bunch of kale, chopped
  • 2 stalks of celery, chopped
  • 1 large carrot, chopped
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 large onion, chopped
  • 1 32 oz container of veggie broth (low sodium if possible)
  • 1 28 oz can of crushed tomatoes
  • 1/2 can of tomato paste (no salt added if possible)
  • 1 cup split red lentils
  • 1 can black beans, rinsed and drained
  • 1/2 cup fresh cilantro, chopped
  • spices: cinnamon, nutmeg, thyme, rosemary, cumin, basil, chili powder, cayenne pepper, smoked paprika, and dried basil

Saute tater, carrots, and onion in a bit of oil or veggie broth until slightly softened.

Meanwhile, put kale in a pot with broth and heat on medium-high heat.

Pour tomatoes on top and continue to cook.

Add sauteed veggies to pot, diced peppers, lentils and beans to pot.

Add cilantro, spices, and tomato paste and stir to combine evenly.

Reduce heat and simmer on low until veggies are completely cooked and lentils are soft.

Then scoop yourself a bowl of the most delectable, delish bowl of food ever!

And let mejust tell, if you wait a day to eat this, ITS EVEN BETTER! After sitting for a day, all the flavors have time to meld together and form my favorite meal. YUM.

  2. Oh my gosh I looooove chili, especially when it has all kinds of veggies in it. Sweet potatoes are the best.
    My go to meal… I don’t really have one. I don’t usually remake recipes, but one that I have used at least 3 times is vegetable stew for kwanzaa. It’s on wegmans.com if you’re interested. It has yams, summer squash, chickpeas, and raisins that plump up and make the dish!
