Spreadin' the Love

Hey everyone!  How are you all this lovely day!?!

I am actually in a really good mood today….far from yesterday’s panicky state. My knee hasn’t hurt all day, so it makes me think that it is finally fully recovered! Yes!!! The true test will be whether I can run on it….I am gonna test it out later this week.

Well yesterday I promised you all the recipes for two fun treats I made over the weekend. A promise is a promise, so here ya go!

Microwave Protein Cake for 1

Spreadin' the Love

2 tbsp pumpkin

2 tbsp applesauce

2 tbsp flour (I used spelt, but whole wheat world work too!)

1.5 tbsp carob powder

1/2 tsp baking powder

2 egg whites

sweetener to taste ( I didn’t use any but if you like things sweeter I would say 1-2 tsp should do the trick!)

a sprinkle of cinnamon

Spray a microwave safe bowl with non stick spray. Mix all ingredients and then pour into pre-sprayed bowl. Microwave for about 3 minutes (could go a little shorter or alittle longer depending on your microwave). Don’t worry if it looks like its going to over flow….it won’t.

You’ll be left with an amazingly moist, light, chocolatey treat! Not to mention full of protein and yumminess! I really want to try this with some banana softserve!

adapted from my Carob-Banana Scuffins

1/3 cup strawberry powder (such as Just Tomatoes brand!!!…..strawberry protein powder would probably work too)

1 banana, mashed well

1/2 heaping cup of flour (I used buckwheat and spelt….the buckwheat made these so good!)

1/4 cup unsweetened applesauce

1/4 tsp baking soda

1/2 tsp baking powder

a sprinkle of cinnamon

1 egg white

Preheat oven to 375*. Mix all ingredients.

Plop some batter (in what ever shape and size you want) onto a parchment lined baking sheet. Bake for 14 minutes.

These turned out fabulous! You might have trouble making these if you don’t have fruit powder…but if you can get some…DO IT! There are so many possibilties with it. But like I said you could probably used strawberry protein powder and get the same flavor…..plus more protein of course!

    Strawberry banana scuffins sound amazing! I might just save myself ordering the fruit powder online and buy the just tomatoes “just strawberries” product, which I do have, and grinding it up in the food processor. Do you think that would work?
