When the good goes bad…

Just got back from one of the worst ‘out to dinner’ experiences ever. It’s not even that the food was so bad (but it was nowhere near GOOD either!), but the atmosphere of the place was terrible and I just always expect to really enjoy a meal at a restaurant since it’s so darn expensive! Plus, it was SUSHI. I am a sushi fanatic, so to go to place where the fish was NOT fresh and on the whole not very tasty was just disappointing. Also, since I love cooking anyways, when I don’t enjoy a restaurant meal it just feels like a big waste of time and money. Erg.

But enough with the rants. This post is about taking the bad with the good and making light of a not so great experience. So despite my less than ideal sushi date, I did see an amazing performance by one of my friends in a one man show, got some baking done (which I haven’t done in FOREVER!), and tested out an awesome core work for you all!

I am moving past the negative and sharing the positive parts of my day!

First up…the cardio core workout! Came up with this last week for one of the days that the Best Body Bootcamp called for core work! Let me know if you try it out or if you have any questions on the moves…

Took me about 20-25 minutes the few times I’ve done it!

As for my baking adventure, I pretty much pulled out a ton of different ingredients/samples I had on hand and threw them together in hopes of making something that would work!

And it did! But I am a little hesitant to share the recipe since, like I said, the ingredients aren’t that common and are kind of random. But, oh well, if you have them on hand (or even things that are similar!) you should be able to make something like these!

Mango Coconut Buckwheat Bars 

makes 12 bars (6 servings) 

2 fruit puree squeeze packs (I used Mango Apple Kale ones)

1/2 cup rolled oats

1/4 cup buckwheat flour

1/4 wheat bran

1 cup freeze dried fruit (I used bananas and apples)

1 tbsp freeze dried coconut water powder (a sample I got a while ago…you can sub 2 tbsp of shredded coconut)

1 tsp baking powder

1 tsp baking soda

a sprinkle of cinnamon

Preheat oven to 350. Mix all ingredients together in a food processor until smooth. Spread mixture evenly  (so its about 1/4 of an inch thick) onto a parchment paper lined baking sheet. Bake for 20 minutes.

Let cool and slice into 12 bars! Enjoy two as a part of a healthy snack!

I am sure these would work great as muffins, scuffins, or in a bread pan too!

    I’m sorry you had a bad restaurant experience! That’s always the worst! Oh well, you live and learn, right?! There’s always the next meal :D . And dude, your cardio workout looks TOUGH! You would be a really good personal trainer or group instructor! Hope your semester is going well :)

    sorry that you had a bad sushi experience. Sushi is one of my favourites, but when it’s bad, it can be really BAD. At least you know what restaurant to avoid in the future, I suppose!
    I’ll have to remember that workout for the next time I’m doing an at-home workout, it looks like a good one.
