WIAW: Cheater’s Chestnuts

Less than a week away from Christmas! Can you believe it?! I know we’ve all said it a million times but this year really has gone quick! It makes me sort of sad that the holidays came so soon (or at least felt that way!). I have to say, I rather enjoy the build up to this time of year! That’s where all the magic is in my opinion.

Once the big day comes it’s all just OVER. :( Then we have to wait a whole year to have all the festive holiday fun again! At least we can try to maintain some of the good feelings that come with the holidays though! Things like my Lend a {Healthy} Hand project can help with that!! (some exciting stuff to announce for this week’s round up!). It’s so important to keep that giving spirit up all year long…

Even though I’m done with my shopping, my mom had to run out to Marshall’s and get some last minute items so I begrudgingly agreed to accompany her…<–Haha just kidding! I LOVE MARSHAL’S! She did not have to ask me twice!

I had some fun looking around while she got her items…


So many random things to be discovered! From left to right: the sexiest pair of underwear I’ve ever laid eyes on, a GIGANTIC life size Santa that was $599, SEA SALT CARAMEL APPLE CHIPS (I immediately thought of Amanda and her love for apple chips when I saw these!), and the new bed we bought for Ella there! She immediately jumped right in it when we got home! What a cutester.

Before I get to the delicious eats of WIAW… I wanted to do a little fitness update with you all!

My foot and ankle definitely feel 100% better now! Unfortunately, the weather has been so crappy lately that I haven’t been able to get many runs in outside. Total bummer as I’ve been really wanting to move my legs outdoors! The gym just doesn’t compare to the high an outdoor run creates!

I’ve also noticed a little hesitancy with getting back into running outdoors though. Once I haven’t done it for a few days, it’s hard to build back up motivation to take the plunge…especially when the temps are so low. So I’ve been trying a new approach to ease myself back into it! Running to the gym instead of driving!

My gym is only about 1.5-1.8 miles away depending on the route I take. So it’s the perfect warm up for doing a little cardio and strength at the gym! Plus this way I’m not using my gas, don’t have to worry about heating my car up/scraping it off, and I don’t get bored with the gym machines as quickly since I cut back on my usual routines if I run there! I’ve been really enjoying these shorter bursts of running and I have to say I don’t even think I’d be able to do my normal distance runs because of the treacherous road and weather conditions! The 15-18 minutes it’s been taking me to get to the gym has been just enough time out in the deep snow and cold. Any longer and I think I’d begin to freeze!

So for now this is working great! I like splitting my time between a little outdoor running and the comfy atmosphere for working out at my gym! When the weather decides not to work with ya, you just gotta adapt! :)

I am pretty jealous of all of you who are able to run outside regularly throughout the winter! Major envy when I see all your clear streets and Garmin pics on Instagram. ;)

Okay…enough fitness, onto the FOOD!

Speaking of chestnuts…here is a super simple way I figured out to cook them!


1. Slice X’s into the flat side of the chestnuts and place them cut side up in a microwave safe bowl with a very small amount of water in the bottom.

2. Microwave on high for 1-1:30 minutes.

3. Remove from microwave, peel, and EAT!

These come out great! Soft and creamy just like when you boil or roast them! But it’s a lot easier and a lot quicker. Perfect for when you want a chestnut on a whim. :)

    I am OBSESSED with chestnuts, I eat like two dozen + in a sitting. We actually got 2 pounds at Thanksgiving, and I pretty much ate them all! I have never had them out of the microwave before though, we always ROAST THEM! Mmmmmmmm knowing this about the microwave makes these babies that much more dangerous!

    You can cook chestnuts in the microwave?! How did I not know that?? Definitely going to try it when I go home for Christmas next week!

    And I honestly don’t know how you EVER run in such cold weather! I can barely force myself out the door when it gets below 50, haha. I’m a wimp when it comes to the cold!

    I know you love the chocolate-mint combo like I do, so if you ever see the So Delicious mint chocolate coconut milk, you MUST buy it! It’s really good and perfect for the holidays–I like it best chilled.

    I’ve actually never tried chestnuts, but now I’m really intrigued. They look a little like dried Calimryna figs but I’m curious as to what they taste like!
