WIAW: Produce Power!

[Before I get into today's post, I just wanted to say how thankful I am for the connections I've made through this blog and through my social media accounts. These past few days have reaffirmed how amazing it can be to connect with people who have similar stories to yours and I am truly grateful for everyone I've 'met' since getting involved in this community over 4 years ago. So THANK YOU. For every comment, every tweet, every letter, and every show of support you all give me on a daily basis. OH and I deeply apologize for the malfunctioning of my Twitter these past few days! I have no idea what's going on and I hope to figure it out soon!]

Taking a momentary break from this week’s Q and A posts to bring you VIP Access to the biggest FOOD PARTY OF THE WEEK! WIAW of course! ;)

Before I get into my eats, I have to share some of the produce power I’ve been enjoying lately!

Frieda’s sent me a lovely package to celebrate Chinese New Year with! The shipment couldn’t have come at a better time, as I was pretty low on fruits and veggies<—not something that happens to often! Here’s all the lovely produce I received…. friedas.jpg

Dragon fruit had a very subtle sweet taste to it and slightly reminds me of melon!]IMG_4059[inside of a passion fruit: such interesting texture and SOOOO fragrant! It was a bit sour for my liking but still delicious!]

A lot of people were wondering how I made my coconut curry kale chips and tofu as seen above! It couldn’t be easier! Recipe below….

Coconut Curry Tofu Kale Chips

Ingredients (1 serving)

  • 2 cups chopped kale
  • ½ white onion, sliced into thin circles
  • 1 tbsp coconut flour
  • 1 tsp curry spice mix (or make your own with a mix of cumin, curry powder, cinnamon, paprika, coriander, and turmeric)
  • 1 egg white
  • 1 serving tofu, pressed and cut into small nuggets

Instructions

Preheat oven to 400. Place all ingredients in a large bowl and mix until evenly coated. Place on a parchment paper lined baking sheet and bake until desired crispness is reached. (I usually do about 30 to 45 minutes)

    I always mean to try dragonfruit, but I’ve heard that the taste doesn’t match its gorgeous and striking appearance. I think I’d be so distracted by looking at how pretty it is that I wouldn’t want to eat it!

    My favourite flavour combination is banana soft serve with peanut flour sauce on top. It’s my idea of heaven.

    I do feel like I have made connections through blogging, but sadly due to some bad experiences (not with any of the bloggers I’ve met IRL though) I just don’t trust most bloggers to tell the truth any more, so my suspicions tend to create a barrier in that respect. It’s a shame, but I feel I need to do that for my own mental health and wellbeing…which is fragile at the best of times.

    I was wondering, with your WIAWs what do you like to have for breakfast? I only ask because I’m just at a loss for breakfast ideas at the moment, and obviously you like smoothies and oats, but are some of your savoury meals breakfasts? I wish I could ‘do’ savoury foods in the morning!

      To be honest I am pretty boring when it comes to breakfasts! I have a few different combinations that I just rotate through each week! Here are my staple breakfasts: smoothie with toppings and yogurt/cottage cheese on the side, overnight oats with fruit softserve, a ton of different toppings, and a glass of juice, or oatmeal with pumpkin, cereal, dried fruit, and nuts with a fruit-almond milk-protein powder bowl on the side! Sometimes I have toast/pita with eggs fruit and juice, but other wise I usually don’t have many savory breakfasts! Sorry I don’t have much to offer in that department! Whenever I have savory breakfast foods it’s usually on a night where I’m having breakfast for dinner!

        No worries – that’s really helpful! I do keep meaning to try one of your fruit/almond milk/protein powder bowls, then I keep forgetting once it gets to the morning! If I’m honest then I only feel bad about having sweet breakfasts because it seems like the entire blog world is into all of these paleo/whole 30/savoury breakfast things. I mean, I like savoury food for other meals, but in the morning I just can’t face anything that isn’t sweet. Good to know I’m not the only one these days. Thanks so much :)

    I’ve always been a little afraid to cook with curry, but you make it sound so good! I’m just starting to experiment a little bit more with spices, and it really is making all the difference. I’m new to blogging, but I’m already loving connecting with other people who are trying to live a healthy and balanced life. I feel so motivated and supported when I see other recipes and workout ideas out there. Can’t wait to build more connections!
