OLYMPUS DIGITAL CAMERAWedo Gluten Free sent me a container of their BANANA FLOUR to try out! Have you ever heard of anything so cool!? I didn’t even know this stuff existed so I was really excited to experiment with it. OLYMPUS DIGITAL CAMERA Only made from green bananas, the flour is gluten free (obviously), organic, non-gmo, high in potassium, full of vitamins and nutrients, and contains resistant starch. Resistant starch has the following benefits for us:

-May help prevent colon cancer and promote colon health

-Help treat and prevent diabetes

-Promote weight loss

-Lower cholesterol and triglyceride levels

-Increase absorption of minerals, especially calcium

-Improves digestion

The flour can be used just like normal flour and you can actually use less in a recipe that calls for regular flour! I decided to try out the flour in PANCAKES! Upon opening the container I was immediately hit with a banana smell! So I was excited to see if this smell would translate into banana flavor in my pancakes. The flour is pretty fine and light so I figured it would make for light n’ fluffy pancakes. But I got a surprise instead! OLYMPUS DIGITAL CAMERASimilar to when I use plantains to make flat breads and pitas, the pancakes came out dense and cakey! They tasted pretty similar to plantains as well. Probably because of how similar green bananas are to starchy, less sweet plantains. Either way, I really enjoyed the pancakes even though they weren’t what I was expecting! They were something different and I will definitely do some more experimenting with other baked goods. Here’s the simple recipe I used for my pancakes incase you’re interested:

  • 2 tbsp banana flour
  • 2 tbsp whey protein powder
  • 1 tsp baking powder
  • 1/4 tsp vanilla powder
  • 1/2 tsp cinnamon
  • 1/4 cup almond milk
  • 1/2 cup egg whites

Mix together and cook in a well oiled, heated pan! Easy and yummy.

Thanks Wedo!

Banana flour?! Whatever will they come out with next? I swear so many great and interesting healthy food products come out ALL the time. Makes me so excited! But I’ve got a long ways to go in trying out more of them…including Nuttzo! Never tried it. I hope I have a chance of winning! My favorite thing to eat with nut butter is my Joseph’s Bakery flatbreads smothered in some PB with some J. :)

My mom needed a last-minute ride (and unexpected) ride to the airport, and I was more than willing to wake up at 4:45 to take her. She has done so much for me, it is the least I can do for her. #healthyhelp

With my eye I spy… edamame! It’s a rare find over here but I was lucky so I stocked up and though I’m a chickpea addict the vote for favourite legume is now a tie between them and edamame.
My favourite way to eat nut butter is plain off the spoon. And with everything – because I’ve yet to find a pairing that didn’t work there.
