My day started off with a wonderfully creamy and delish bowl of ONO. Topped with cherry-banana software, it was perfect!

This is seriously one of my favorite breakfasts, it tastes like desert and is so addicting.

Many of you were curious about the Sweet and Sour Veggies I made yesterday for Fathers Day so here is the recipe:

Sweet and Sour Veggies (adapted from a recipe in Clean Eating Magazine)

Better than Campbell's

What ya need:

~2 zuchinni, cut into half moons

~two yams, microwaved for five minutes or until almost cooked and then cut into small chunks

~2 small red peppers, cut into chunks

~1 yellow pepper, cut into chunks

~1 yellow onion, cut into thin strips

~1 large head of brocoli, cut into florets

For sauce:

~1/3 cup soy sauce

~2 tbs raw honey

~ 1/4 tsp red pepper flakes

~2 cloves garlic, minced

~about 1/3 cup pineapple juice

What to do:

Mix all sauce ingredients in a bowl and stir until well combined. Pour into a large saute pan and heat over medium heat. Put all vegetables into the pan and coat all vegetables with sauce. Bring to a boil. Then turn heat to low, cover, and let simmer until vegetables are cooked through. Sprinkle with cilantro and enjoy! (the cilantro is amazing on these)

Siggis is a wonderful New York company that manufactures Icelandic style yogurts (or skyr as they call it) in a wide variety of flavors. The generous people over at Siggis sent me a bunch of coupons to try there yogurts. Here’s what i found over at my local store:

So far I have been boring and have only tried two flavors (orange ginger and plain) but will definitely be having the rest of them ASAP because they are really good.

The Orange Ginger was way different than I expected. I went in thinking this would be my least favorite flavor because I typically dont like the taste of orange when its in food products. However, I was blown away by the thickness of this yogurt and the creamsicle like undertones. It was perfectly citrus-y with a nice zing from the ginger. The nice thing about this yogurt is that it is not super sweet and the flavor is subtle….but still really enjoyable.  The consistency was thicker than most greek yogurts and uber creamy. Actually, I have to say… it kinda puts most greek yogurts to shame! Go Icelandic-style yogurts!

The plain yogurt was much less tangy than most plains and almost was like a new flavor of yogurt because of its unique taste. Again very thick and very delicious with some granola and crunchy cereal on top.

So far out of all the yogurts I have sampled these guys and the Voskos yogurt have been my absolute favorites!  Thanks again Siggis!

More delicious food came my way today. I was sent a load of treats from Betty Lous, “makers of great tasting and healthy snacks”. This family owned, homemade, health conscious company makes all sorts of products from protein filled nut butter balls to snack bars that combine chocolate and vegetables!

The people over at Betty Lou’s were so kind and spared no expense to send me a lovely sampling of their goods. Here’s what I got:

I had just gotten back from a run when this package arrived so I dove right into some refueling treats. I tried the Peanut butter ball and the Chocolate Peanut butter Smacker. The ball was very chewy and very peanut buttery. Made with all natural sweeteners as well as healthy fats and proteins, it was yummy. I definitely recommend eating these with a tall glass of milk, as they were really CHEWY.

Out of the two things I tried, I like the Smacker the best! It was delish, with a thin layer of chocolate over a moist, peanut buttery, almost half-baked cookie. Even though these little guys don’t have coconut in them, they had a texture very similar to a coconut macaroon. Very cool!

I am really excited to try the fruit bars they sent (they look like little HEALTHY toaster pastries) and they Just Good Stuff bars that combine fruit and veggies for a wholesome snack. All of there products are gluten free and made with great natural sweeteners.  

Now, I think I should explain the title a little bit. For dinner tonight, my mom and I made homemade tomato soup and grilled cheese. This dinner brought me back to when I was a little kid, eating grilled Kraft singles with Cambells tomato soup for lunch. That was a good meal, but homemade….. it was out of this world. We used the old handy dandy panini maker for the sandwiches and they grilled up nicely. Very melty! For the soup, we followed a simple tomato soup recipe we found online ( all the typical ingredients: onion, celery, carrots, garlic, tomato’s etc.) but the star  ingredient came from our own back yard. Freshly grown basil!

Ella is due for a walk (even though she’s been lounging around all day from the heat), so I am off.
