My Dad’s Day

Like I said in my last post, yesterday was my dad’s birthday!! It was a great day and I think he really enjoyed our dinner out together!

He started the day with his weekly “brothers” tennis game and then came home to nice breakfast made by muah!

[a yummy breakfast burrito with salsa and black cherry greek yogurt with Sweet Cranberry Love Grown granola]

Dad’s Breakfast Burrito

serves 1

-2 eggs

-1/4 cup crumbled turkey bacon

-1/4 cup part skim mozzarella cheese

-1 laughing cow swiss cheese wedge

-1/2 avocado, chopped

-1/4 cup salsa

-1 whole wheat tortilla (the ones at Wegmans are DEEEElicious!)

Wisk the two eggs together with some salt and pepper. Heat a pan to medium heat and spray with cooking spray. Add eggs. Once they set a little bit, add the bacon and mozzarella cheese and scramble everything together. Once eggs are cooked through, remove from heat and set aside. Meanwhile, spread the tortilla with laughing cow, top with the egg mixture, then the avocado. Sprinkle a bit more salt over the avocado and either top with salsa or serve it on the side!

After breakfast, we pretty much relaxed for the rest of the day! I worked on some essay writing (which I completed…thank god!!!) and we snuck out for a little walk with Ella. But besides that it was pretty chill as you can see…

They actually specialize in vegetarian cuisine! But the menu offers meat  options as well! Perfect mix of both worlds.

Another Holiday

One of the reasons I love blogging is because it is such a fantastic way of documenting special occasions. Like my own photo album or journal…perfect for looking back on special memories. Plus it helps me recall a lot of things that may have been forgotten otherwise. (all this will make my 2011 recap post infinitely easier!)

Yesterday was another special event I would hate to have gone undocumented. Yesterday was my mom’s birthday.

Honestly my parents birthday’s are like holidays to me. I just feel so lucky to have them in my life so celebrating their birthday’s is so special. Sure it marks a year of growing older for them. But for me it’s a celebration of how lucky I am to have had them in my life for yet another wonderful year. I really like when their birthday’s are special and enjoyable…I want them to know on their birthday’s  EVERYDAY how much they mean to me!

All I Want(ed) for Christmas…

Came true!

Merry Christmas to everyone celebrating and Happy Holidays to everyone else!

Yesterday and today were so magical. Christmas eve was truly one of the best I can remember! Every part of the day was just so fun and full of so many great, memorable moments. And this morning was even better. Just hanging out with my family and totally and completely relaxing have been SO nice. How’s about a little recap?

Christmas Eve:

Started the day off with a kick ass workout…including my first run outside post injury!!! Yay!! This was SO exciting!

Insert lots of chill family time and then we were off to our annual Christmas Eve celebration at my Aunt’s house!

The Sweet Potato Lentil Chili was a hit!! None left by the end of the night and everyone raved about it!! Other yummies included: shrimp cocktail, salad with a creamy dressing and lots of eggs, homemade pizza, stewed calamari, roast beef, baked eggplant (!), chicken and cheese empanadas, cheesy potatoes, and lots of fun toppings!

The deserts were amazing too! Spice cake, homemade chocolate covered pretzels and biscotti, tons of authentic italian cookies, and the treat that stole the night: OREO COOKIE BALLS. Basically Oreo’s crushed up and mixed with cream cheese and then covered in dark chocolate….BOOM.

After the festivities…we settled in back home, popped in a movie, and anxiously awaited the fun of the morning!

Christmas Day:

And what a great morning it was! I seriously could not ask for more giving, generous parents. They got me more than I could ever ask for. But in all honesty my favorite part of Christmas morning is watching other people open up gifts. I love seeing that genuine look of surprise and excitement on their faces!

I woke up before everyone else and worked on getting the living room cozy and festive looking…cue music and fire place lighting!

We always start with stockings and then work are way over to the few special “big” gifts! And my dad ALWAYS wears a Santa hat. Smile

[Avocado-veggie scramble and Date-Sweetened Gingerbread Scuffins!]

Today was completely chill. I literally did NOTHING. Basically sat on my butt, ate, and watched TV. But hey, its once a year. And tomorrow I have a boat load of school work to do…so its back to the grind. I applaud all of you who were able to exercise and be some what productive today…I on the other hand just wasn’t feeling it.

All and all, my family and I had a wonderful holiday and I hope yours was just as special!
