Friends…January is EPIC.
Yes, it’s the first month of a new year…but I am more excited for the fact that it is JAM-PACKED with fun food holidays!! All the more reason to get creative in the kitchen, am I right?!
Today’s recipe is a celebration of not one, but THREE food holidays that January is known for. Believe it or not, January is National Hot Tea Month, National Oatmeal Month, AND National Baking Month! I am a fan of all three of those things so you know I had to celebrate BIG.
Now you may be thinking, the holidays are over…who needs another baked good recipe? Especially a COOKIE one! But if you’re like me (and I hope you are!), cookies are an all year round, everyday type of food. Who needs to restrict themselves to cookies for only a few weeks a year? Not my game at all.
And I think the cookies I am sharing today are good way to easy yourself out of the decadence of the holidays and back into sweet treats and snacks that you can feel good about making/eating! Baked goods can be healthy AND delicious…as I’ve proved numerous times over the years.
The stars of today’s recipe is my favorite whole grain…OATS. Not just any oats though, my go-to quick oats (the ONLY oats I make oatmeal with!) from Bob’s Red Mill as well as some of their GF oat flour. Their whole grains are so tasty and high quality that you’d never even know these cookies are made from whole grains.
Drawing inspiration from the fact that it’s National Hot Tea Month as well, I wanted to make a recipe that acknowledged my favorite kind of tea, as well! Can you guess what it is?
CHAI! The combination of cinnamon, fennel, cardamom, pepper, ginger is just SO delicious. All some of my favorite spices! They certainly make a delicious tasting tea, so I knew a baked good based off those flavors would be even more yummy.
These spices, along with my favorite baking ingredients from Bob’s Red Mill, combined to make a healthy treat that’s nutritious enough to eat for a breakfast on the run or sweet enough to indulge in for dessert!

Ingredients
- 1/2 cup vegan butter spread
- 3/4 cup Bob’s Red Mill Date Sugar
- ½ cup applesauce
- 1/4 tsp vanilla bean powder
- 3/4 cup Bob’s Red Mill GF Oat Flour
- 1/2 cup Bob’s Red Mill GF Regular or Quick Oats
- 1/4 tsp baking powder
- 1 1/4 tsp cinnamon
- 1/2 tsp cardamom
- 1/2 tsp ginger
- 1/4 tsp allspice
- 1/8 tsp black pepper
- 1/4 tsp sea salt
- 1 tbsp Bob’s Red Mill Ground Flax Seed
- 1/4 cup Bob’s Red Mill Raw Almonds, chopped or slivered
Instructions
- Preheat oven to 350. In a mixing bowl, cream together butter and sugar. Add applesauce and vanilla and mix until evenly combined. In a separate bowl combine all dry ingredients and mix until evenly combined. Add dry ingredients to wet ingredients and stir together. On a parchment paper lined baking sheet, divide cookie dough into 12 heaping tablespoons. Make sure there is ample space between the cookies. Bake for 10-12 minutes. Remove from oven and let cool on a wire rack!
Vegan, gluten-free, and naturally sweetened. You can’t get a cookie healthier than these!
Note…these aren’t crunchy and crumbly like your typical cookie. Instead, they are soft and chewy (as their name indicates)! Even after sitting for a few days, they retain that unique texture.
Another plus? These cookies are probably the best smelling cookies I have ever made. They literally filled my apartment with the most incredible scent as they were baking. I wish I could have bottled it or made a candle out of it! And their taste is pretty darn amazing as well. Such a great mixture of complex spices with the a subtle sweetness and richness from the nuts and vegan butter! Definitely a perfect way to get in some healthy fiber, fats, and antioxidant rich spices while still getting to enjoy a little treat.

SUGAR COOKIES ARE THE SHIZZZ NEEEEZZZZ!!!! And I do like Chia Tea, but I cannot have milk or soy, and I used to LOVE THEM with soy milk! Maybe I could try a little un-sweetened coconut milk or hemp milk! YESSS!! 🙂

I seriously LOVE soft oatmeal cookies. My fave would be oatmeal chocolate chip peanut butter. I’m so thankful God designed different food combos to go together so well; He’s such a wondrous Creator! And fave tea would have to be peppermint or peach. 🙂
