But seriously, with graduation this weekend, celebrating with my family, and some recent business opportunities that have come my way, I’ve been busy! Which means I totally missed the boat on this month’s Recipe Redux party.

Well even though I won’t be linking up this month (bummer!), I still wanted to go ahead and share my ‘small bite’ recipe with you anyways! I’ve been depriving you guys of this deliciousness too long and it’s time I stop hoarding all the cookie dough goodness to myself.
That’s right, today is all about COOKIE DOUGH BITES!
But these aren’t just any cookie dough bites. No, sir! These have one of the most unique flavor combinations on the planet. Sure they have chocolate, but they’re not your traditional chocolate chip or chocolate peanut butter. These small bites of dough delight include one of my new favorite ingredients….TAMARIND!
Have you heard of it?! I had seen it fresh a few times in the store…big strange looking pods that I had no idea how to open or even what I’d use them for. I didn’t know what type of food it was or what kind flavor it had.
Turns out tamarind is a fruit! A highly prized, exotic one at that. It’s got a tangy, slightly sweet flavor and is known as the “date of India”. Its pulp is what’s used from it and it is often boiled down in to sticky pastes, syrups, or spreads.
I found tamarind chutney in the Indian section of the grocery store the other day and trying that for my first tamarind experience seemed a lot less intimidating than trying to extract the pulp from the pods myself.
You guys. Get your hands on some tamarind chutney ASAP. I’m obsessed. Only made with tamarind, dates, and spices, this stuff is amazingly flavorful! Slightly smoky, very sweet, and so tangy.
I loved the contract of sweet and savory right in the chutney itself and given my love of unique flavor combos, I decided to pair it with CHOCOLATE. Sort of like that whole Mexican chile and chocolate tradition.
The result of mixing a few simple ingredients together with my new chutney obsession resulted in bite-sized cookie dough treats with the most interesting taste you’ve ever had.
- Mix all ingredients together and divide evenly into 6 cookie dough bites.
As I mentioned above, I am loving tamarind lately so of course that’s why I used tamarind chutney in this recipe. If you’re not quite as adventurous with your taste buds though, feel free to swap in apple butter or another fruit-sweetened jam/spread. You’ll still get the same great texture but a slightly different taste. Less chocolatey-spicy and more chocolatey-fruity!
Gluten-free, high protein, and no added sugars! These cookie dough bites are irresistible and totally customizable too. Feel free to add some mix-ins or even change up the flavor combinations using different protein powders or fruit-based spreads.
Now if you’ll excuse me, I have a date with some cookie dough! 😉
