A chocolate treat full of hidden veggie nutrients! These protein cookies are soft and doughy with the perfect mix of sweet chocolate flavor. They make for a great post-workout snack to refuel your muscles or a healthy dessert when you need something light!
If you know me, you know I love protein powder! I use it a few times a day and often bake with it. I’ve tried a ton of different varieties and flavor, but the kind I always come back to as my favorite is whey. It’s naturally sweet, works perfectly in baked goods, and has amazing texture in things like power bowls and smoothies. Does anyone else not like mixing their protein powder in to their liquids? I like it powdery! 🙂
It’s not too often I come across a whey protein powder that I haven’t tried (believe me I’ve made the rounds!), so when I saw EAS® Protein Powder on a recent trip to Target I knew I had to pick some up! It was located right in the pharmacy section and really easy to find.
The EAS® Protein Powder single serve packets are exclusive to Target and they are perfect for getting in a healthy dose of clean protein on the go. You can mix them into your favorite liquid (I like cashew or almond milk!) or bake them into a recipe like I did!
I love single serve packets of protein for travel, for taking to school, and for quick post-workout refueling. It’s so important to feed your muscles after a hard workout or strength training session and it’s such a pain to measure out a single serving from a big container. These on-the-go portable packets from EAS® totally remedy that. Just rip open, mix, and CHUG! Or in my case BAKE.
- ½ cup zucchini puree
- 1 tbsp cocoa powder
- 1 cup (150 grams) white beans
- ¼ cup egg whites
- 2 scoops chocolate whey protein powder (2 single serve EAS® protein powder packets)
- ½ tsp vanilla
- 1 tsp mint
- 1 tsp baking powder
- Preheat oven to 350. In a food processor, blend beans until smooth. Add remaining ingredients and blend until smooth and well combined. Divide batter into 10 circles on a parchment paper lined baking sheet. Bake for 10-12 minutes. Remove from oven and cool on a wire rack.
