There’s just something so fun about making over a store-bought product into something healthier or homemade. Saves money, allows you to switch up ingredients to suit your own needs, and creates endless flavors/taste combinations!
Today I am sharing my latest ‘copycat’ creation!
Have you ever heard of Simply Protein bars?
I discovered them quite a few years back (when they were still only available in Canada…luckily that’s changed now!) and FELL IN LOVE with their rice crispy like texture. They’re seriously like healthy rice crispy treat snack bars.
They have vegan versions, whey-based versions, and even a line of bars for the kiddos!
Now for my creation….
I used one of my go-to products for adding protein and crunch to my meals and snacks, Whey Protein Crunchies. I use this brand. I recently found them while doing some random google searches and I am loving experimenting with them so far.

- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 6 bars 1x
- Category: Sweet Snacks
Ingredients
- 1 large ripe banana (about 100 grams)
- 1 scoop Vital Proteins Collagen Peptides
- 75 grams Body 360 Nutrition Whey Protein Crunchies
- cinnamon to taste, optional
Instructions
- In a food processor, blend banana until pureed. Add collagen and continue to puree until smooth. In a bowl, combine banana mixture and whey crunchies. Stir to evenly coat. Place bar batter into a parchment paper lined baking sheet and spread until evenly distributed. Place in the freezer for at least 2 hours before slicing and serving. Store in the fridge (softer texture) or freezer (firmer texture).
Gluten-free, high in protein (obviously), and no added sugar! Plus they have added collagen which is a total ‘IT’ food right now. Everyone I know if using collagen in their baked goods and snacks lately. Are you a fan?
I’m sort of hesitant to title these ‘Copycat Simply Bars’ because they don’t really compare to the classic ‘rice crispy treat’ texture of the original Simply Bars. They’re a bit more chewy rather than crispy and they certainly won’t be replacing my love of the originals!
BUT they are a great snack and they have an awesome unique texture all their own due to the whey crunchies I used. I realize this ingredient is a bit strange and might not be widely available, but if you’re looking for a new way to enjoy protein….this is it! Can’t wait to do more creating with my new favorite ingredient!

These protein crunchies look so delicious! I don’t know what I’d be able to make them last long enough to make bars though…I probably wouldn’t be able to keep my hand out of the bag!
