Quick Spelt Crumpets
  • ½ cup spelt flour
  • 2 tablespoons whey protein powder
  • ½ tsp baking powder
  • 1 tsp yeast
  • ⅓ cup warm water
  1. Dissolve yeast in water. In a separate bowl, combine flour, whey, and baking powder. Pour yeast mixture into flour mixture. Mix until fully combined. Let sit in a warm place for 5-10 minutes until some bubbles form on top.
  2. Heat a nonstick pan on high for a minute. Reduce to low and place egg rings in the pan. Divide batter up amongst the egg rings. Cook on low for 10-12 minutes. The crumpets should begin to dry and form bubbles on top. Remove egg rings, turn over crumpets, and cook for 2-3 more minutes.
