Woah two days without blogging is AWFUL! I missed you all so much!
Quick question: Are any of you receiving comment replies now? I think I changed some of my settings and you all should be getting them, but let me know if you aren’t! Oh and while were on the subject of blog stuff….I now have a Formspring page for the blog where you all can ask me anything you want! I’m so excited to start answering questions!
Well Monday was a day full of firsts! If any of you follow me on Twitter you know how excited I was to be getting my first bit of cardio in over two weeks. I discovered on Sunday that biking doesn’t hurt my knee (surprising since simply walking hurts it!), so I decided to try a spin class at my local gym. I had never been interested in cycling before, but I was desperately in need of a good shweataaay workout.
The instructor was definitely a little goofy but she played good music (everything from glee to lady gaga!) so I enjoyed myself. I will say that spinning is not my cup of tea….it’s a little to repetitive for me (I’d rather be outside seeing the sites by bike or foot!), but for the sake of sweating, it’ll do the job for now!

I also tried my first Kombucha drink on Monday as well. It was one of the things I got from Paije for winning her giveaway.
I actually really liked it! I have heard it takes people a few times to develop a taste for it, but I thought it was really enjoyable and very different from anything I have ever had! The kind I had was carbonated….for all you Kombucha regulars out there, is Kombucha usually carbonated or is it more like a juice? The one I tried may have just been a special variety.
(And guess what!? Trying Kombucha was on my 101 in 1001 list! I can officially cross off something! YAY!)
While were on the subject of fun drinks…..I was also sent some yummy new drinks to try! More specifically, Immune Boosting shots from Arbonne Essentials!
Let me just say…I wish these bottles were bigger (they are only 3oz!!) because the juice inside is DE-LI-CIOUS! It reminded me of pomegranate juice except better! And it also better nutritionally…..100% of your daily need of Riboflavin, 200% of your daily Vitamin C, 50% of your daily Vitamin D, 50% of your daily Selenium, not to mention a ton of great added herbs and supplements that bolster your immune system and give you a natural boost of energy!
I promised you all my new recipe for Gingerbread muffin tops and I have to follow through on a promise, right? Of course!
So here ya go!
Gingerbread Muffin Tops
These guys are more fudgy and dense rather than muffin-y, but they are still delicious and very nutritious!
- 1 1/8 cup of spelt flour
- 2 tbsp molasses
- 2 tbsp agave nectar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup unsweetened apple sauce
- 1 medium peeled sweet potato, chopped, steamed, and mashed
- 2 tbsp greek yogurt
- 1 egg white
- 1/4 cup raisins
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 +1/8 tsp powdered ginger
- a tiny pinch of cloves
- 1/4 cup coarsely walnuts (optional)
Preheat oven to 350*. Mix wet ingredients (applesauce, egg white, greek yogurt, molasses, mashed sweet potato, and agave) in one bowl and in another bowl mix dry ingredients (spices, flour, baking powder, baking soda). Then fold wet ingredients into dry ingredients and stir until combined. Stir is raisins and walnuts, if using. On a parchment paper lined baking sheet, plop down 8-9 equally sized batter globs (for lack of a better word :)).
They might seem a little undercooked when you take them out, but that’s okay. I recommend let these cool on a wire rack and then chilling them overnight in the refrigerator before diggin’ in! Enjoy!
