This post is going to be pretty random…just a collection of thoughts, things that I am currently likin’, and fun favorites from the past week…I even have a little recipe for you all!
A few good things:
Being an international relations major…it’s made me so much more aware and interested in happenings all over the world! The news has a new meaning in my life.

Things I my mom has always told me that I am FINALLY listening to:
Okay this is REALLY random, but I was thinking about this today and I thought I’d share. You know how your parents tell you things when you’re little that you never really listen to or you don’t think are that important. I never thought I would grow up enough to actually start listening to some of these simple things, but now that I am a bit older it’s funny how I’ve started to embrace all the good advice my parents have given me. Two simple things my mom always reminded me of when I was little was to take care of my teeth (i.e. FLOSS!) and wear sunglasses (since the sun can hurt your eyes just as much as your skin!).
I am proud to say floss TWICE a day now! And I am so happy with how healthy my teeth are. It really pays off.
And I wear sunglasses a lot more often now as well. Maybe a little to much! I am constantly forgetting I have them on and end up looking like a total weirdo when I am inside places. Haha!
Flavors I am loving lately:
Anything peanut butter
(not very Fall oriented, huh?)
That last one is a bit surprising don’t ya think? As I am usually not a coconut fan!
But after Coconut Secret sent me some products to try, I am no longer a coconut flour virgin. And I think trying the flour (that has been ALL OVER the blog world lately) is what finally sold me on coconut.
IT IS DELICIOUS! I used it to make some pancakes and fell in love. Here’s the recipe I came up with…
Easy Coconut Flour Pancakes
- 1/4 cup oats, ground into flour
- 2 tbsp coconut flour
- 1 egg
- 1/2 cup almond milk (may need a little more liquid depending on how thick you want your pancake batter)
- 1/2 tsp baking powder
- cinnamon to taste
I like how dense the coconut flour is and how fluffy and doughy it made the pancakes.
I also tried their coconut vinegar!
I love using vinegars in salad dressings and was pleasantly surprised with the flavor of this coconut variety. Not as sweet as a balsamic vinegar but with a subtle sweetness to counter the acidity. It paired really well with the humus I used on top of my salad!
