Flourless Brownie Thins [vegan + fruit-sweetened]

Ooey, gooey brownie thins rich in chocolate flavor and fudginess! These healthy treats are grain-free, vegan, and totally fruit sweetened. Full of superfood ingredients, these are the brownies that you can feel GREAT about eating.

It’s Monday. I have four essays due this week and a final presentation to work on. I need chocolate.

Come to think of it, we all need some chocolate. What people say about chocolate cravings is so true. Whether it’s that time of the month or just a busy ‘ol Monday, chocolate just does a body good. And I have been eating it non-stop lately. Good thing there is all those click bait articles out there touting the benefits of eating chocolate on the regular. I feel JUSTIFIED! 😉

Here’s a few of my favorite ways to get my chocolate fix lately…

Speaking of brownies…I think that form may be my favorite way to consume chocolate as of late. There’s just nothing better than biting into a fudgy, soft brownie with a perfect cracked top. Especially an edge piece! You all are with me in the edge piece versus middle piece debate, right?

Lucky for you, that’s exactly what I have to share today. Ooey, gooey Flourless Brownie Thins! Thins because of their shape…NOT because of a lack of chocolate goodness. I can assure you of that.

These brownies are some of the fudgiest I’ve ever had despite their thinness. They were inspired by all the raw brownie recipes I always see in that their only sweetened with fruit and contain no grains or gluten. But they’re not raw…they’re baked like traditional, amazingly delicious boxed brownies. Not joking here! But enough of me chit-chatting…let’s get to the chocolate!

Recipe type: sweet snacks
Serves: 9 brownie thins
Ingredients
  • 2 very ripe bananas, roughly chopped
  • 6 dried dates, chopped
  • 4 tbsp unsweetened applesauce
  • 4 tbsp finely ground flaxseed
  • ¾ cup unsweetened cocoa powder
  • 1 tsp vanilla bean powder (or 1 tsp vanilla extract)
  • 1 tsp instant coffee granules
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ⅛ tsp salt
  • ½ cup + 2 tbsp non-dairy milk (I used unsweetened cashew milk)
Instructions
  1. Preheat oven to 350. In a food processor combine dates and bananas until pureed smooth. Add remaining ingredients and process until smooth. Line an 8x8 baking dish with parchment (or spray well with cooking spray) and pour brownie batter into it. Spread evenly throughout dish. Bake for 35 minutes or until a knife comes out cleanly from the center. Cut into 9 pieces.

Sweet, chocolatey, grain-free, HCLF vegan, and high in healthy fats from the flax! Brownies have never been so healthy before. And since they’re ‘thin’ and don’t look like typical brownies, you can totally eat them for a snack. As someone who snacks on brownies regularly…I will tell you it’s a very good idea. 🙂

I’ve been all about baking with dates lately. Seems like I’m taking after my friends Natalie! But I am totally okay with that because what I’m finding is that they not only add amazing sweetness but TEXTURE. I totally attribute the fudginess of these brownies to the use of dates. If avocado is Nature’s butter, dates are Nature’s candy/caramel. So darn good.

    Ever since Easter I have been craving chocolate like a mad women! You sound like you have the craziest schedule, your chocolate is thoroughly deserved! My favourite part of brownies are the crispy edge pieces.

    Well, I have all ingredients on hand, a definite curiosity and a crazy desire to find a healthy brownie. I tried one last week that used pumpkin… and my better half refused to let me call them brownies, opting instead for ‘some kind of chocolate puddingish thing.’. We’ll see how these fare! Thanks!
