Frosty Cocoa Mint Protein Bars

Ever since reviewing some bars for Thunderbird Energetica a few weeks ago, I couldn’t get the combination of mint and chocolate out my mind.

Their cacao walnut hemp bar legit tastes like Mint Chocolate Chip ice cream…but almost…BETTER. Needless to say I have been craving that combo, so I though I’d take it in to my own hands to create something just as delicious. I was veeeeery happy with the result and I think you will be too. Vegan. No Sugar Added. Low in carbs. High in protein. Whole grain. *swoon*

Okay, you’ve been waiting long enough…

Frosty Cocoa Mint Protein Bars


Makes 12 bars (or 4 three bar servings)

  • 4-5 medjool dates (approx. 70 grams) , chopped
  • 1 oz dried banana (if you can’t find this add 2 to 3 more dates)
  • 1 ripe medium banana, mashed
  • 2 tbsp cocoa powder
  • 1.5  tsp dried peppermint
  • 1 serving brown rice protein powder (approx. 53 grams)
  • 1/2 cup finely ground wheat bran
  • water

Preheat oven to 350. In a small bowl place dates and dried banana with about a 3/4 cup of water. Microwave on high for 1 minute. Place dates, dried banana,and mashed banana in a food processor with the water from the bowl. Process until a smooth consistency is reached. Add cocoa powder, mint, protein powder, and bran and process until evenly combined. The batter should be a pasty consistency but not too thick! On a parchment paper lined baking sheet that has been sprayed lightly with non stick spray, spread batter in a rectangle shape to desired thickness (just make sure its as even as you can get it…another piece of parchment paper on top and a rolling pin work well here!). Bake for 25 minutes. Remove from oven and immediately place in the freezer for at least an hour. After freezing, slice bars and store in the freezer.

I personally love these straight from the freezer and think the cold enhances the flavor immensely!


So these are more of a frozen bar treat I guess Smile 

Either way though….they are delicious and have the perfect balance of mint, sweetness, and CHOCOLATE.


In fact, its looking like snack time around here…I think I will go have some right now!

    Yay for the long-awaited protein bars! I’m not really one for the mint and chocolate combo, but these look so rich I might have to make them and omit the mint. Thanks for sharing, Kaila!

    These look so simple! I’ll have to find some protein powder that’s not gonna wreck my wallet but i’m definitely making em. Good luck with your exam!

    And chocolate pairs best with salt for me! Since sweets aren’t often my thing it’s wonderful to have some savory with it.
