Ooey, gooey mocha muffins that are super moist and full of chocolatey goodness! Rich and decadent with a trio of amazing flavors…the combination of coffee, chocolate, and sweet cranberries can’t be beat. Whole grain, gluten-free, and naturally sweetened, too!

Moist. Possibly one of the most hated words on Earth.
In fact, I am probably taking a risk by starting a post with the word. 😉 I, myself, am not a ‘moist hater’ though. Sure, it’s not my favorite word, but I think it has a time and a place. Especially when it comes to baked goods!
It just perfectly sums up that indescribable soft texture that baked goods get when you use certain ingredients to make them! Applesauce, pumpkin, and bananas come to mind.
But my all-time, go-to insure my baked good comes out perfectly moist and filled with ooey gooey deliciousness is…YOGURT.
It makes my Red Velvet Bites irresistible and my muffins fluffy like pillows! Yogurt is truly on the best healthy swaps you can make in your baked goods. Sometimes when you try to ‘health-up’ a recipe, they don’t turn out as good as the original. But with yogurt? I think they turn out BETTER.
I got some inspiration for a new recipe the other day when I was shopping at my local co-op. I spied a new-to-me flavor of yogurt made with Real California milk and knew I had to make something with them. COFFEE. I’ve never had yogurt in that flavor and since I know I love this brand as it is, I bought a few to test out.
Yogurt made with Real California milk is pretty much the only non-Greek variety I’ll eat. Most regular yogurt is too liquidy and thin for me, but varieties made with that milk is thick, creamy, and delicious. Especially this flavor!
To be honest, I opened it as soon as I got and added a little cocoa powder on top. 😉 Ya know for that mocha flavor?
Outstanding! I enjoyed the yogurt treat so much in fact that I decided to take these flavors and make some muffins with them. I’ve always had success using yogurt in breads and muffins in the past and Real California yogurt is my got-to for baking since it’s so flavorful.
Thus, my new Mocha Cranberry Muffins were born! Gluten-free, made with whole grain oat flour, studded with sweet cranberries, and SO dense and moist.
- Preheat oven to 400 degrees. Beat together wet ingredients. Once mixed, stir in dry ingredients (except almonds and cranberries). Fold in almonds and cranberries. Stir until evenly distributed. Divide batter among 12 muffin tins (mostly filled to the top). Bake for 35-40 minutes (or until a knife comes out cleanly form center of the muffins) at 400 degrees. Store in the refrigerator or on the counter and eat within 3-4 days!
I actually purposely under-baked mine a bit so they’d have an extra soft, gooey center. Sort of like…brownies! Brownie muffins? Yes please!
These Gluten-Free Mocha Cranberry Muffins make the perfect sweet snack or breakfast. The coffee flavor will certainly perk your up in the morning and the filling protein and fiber will fuel you for the day ahead!
I personally love these crumbled on top of more Real California yogurt! But don’t get me wrong, they’re delicious on their own.
