Sweetly spiced, soft baked cookies that combine delicious mango flavor with superfood Turmeric! High in protein from beans, gluten-and grain-free, and easy to make…these cookies will be your new favorite way to enjoy the spice of the moment!
Ever since Leah shared her Golden Milk Overnight Oats recipe, I’ve had turmeric on the brain! It seems to be all the rage lately. Sort of the food (or in this case spice) of 2016.
Probably not a bad thing seeing as it’s one of the best natural fighters of inflammation as well as having a bounty of other nutritional benefits. Did you know…
+ turmeric has been proven to be anti-inflammatory, antioxidant rich, a digestive aid, a natural skin remedy, an adjunct treatment for cancer as well as a prevention for many diseases such as heart disease, diabetes, and auto-immune conditions
+ you only need 1-4 grams daily to reap the benefits of it
+ turmeric improves the way we break down fats and sugars
+ despite it’s pigment, it can be used to white teeth
+ turmeric makes a great natural food coloring or dye
Not bad for such a bright little spice, eh? Just look at that color! It’s bursting with golden rays of sunshine. 🙂
Obviously, turmeric is super good for you, but unfortunately on its own it doesn’t taste very good. In fact, based on personal experience it’s pretty darn gross when eaten straight up. But that doesn’t mean it lacks potential!
Just like we learned with Leah’s recipe, it only takes a bit of sweetening and some other tasty ingredients to make it pretty darn delicious.
That’s why I decided to pair it with mango in my Golden Mango Protein Cookie recipe!
The sweet mango brings out the best of the spice’s natural flavor notes and makes these aromatic cookies a great mix of fruit and spicy!
- ½ cup (75g) white kidney beans, rinsed and drained
- ½ cup (70g) frozen mango chunks, thawed
- 2 tbsp liquid egg whites
- 1 tsp turmeric powder
- 1 scoop (28g) vanilla whey protein
- ½ tsp vanilla
- ½ tsp ginger
- ½ tsp baking powder
- sweetener, to taste if you like a sweeter cookie
- Preheat oven to 350. In a food processor, blend beans until smooth. Add remaining ingredients and blend until smooth and well combined. Divide batter into 5 circles on a parchment paper lined baking sheet. Bake for 10-12 minutes. Remove from oven and cool on a wire rack.
If you’ve tried my Green Tea Mango Protein Cookies, then you’ll love these! The beans not only make them high protein and high fiber, but also gives them a lovely, soft texture. These cookies are like pillowy clouds of golden goodness!
Gluten-free, grain-free, and a great way to get your daily serving of turmeric in if you’re not a fan of it on its own.
