I have to admit, there isn’t much I miss about going “back to school” in the fall. As much as I liked school and still love learning in my day-to-day life, there is something nice about not being forced to follow a rigid schedule, write papers, and meet strict deadlines for assignments.
One thing I do miss, surprisingly, is packing my lunch every day! That in something I really enjoyed about school. Coming up with fun meal and snack ideas to pack each day and look forward to in my classes. Let’s face it, lunch was always the best part of school anyways, so having a fun, tasty meal to look forward to was always exciting.
My mom always came up with really awesome things to include in my lunchbox as a kid and as I got older I started to do the same. It was always nice to go to the grocery store each week and pick out a new snack or treat to pack for lunch!
My love for snacking hasn’t changed and even though I am not technically “going back to school”, I still always am inspired to come up with some unique, healthy snacks this time of year.
