I was a little hesistant at first to review pie fillings on a supposed “healthy living blog”, but then I figured it would be a great opportunity to share one my mom’s famous desert recipes. Another plus is that Lucky Leaf’s pie fillings are unlike most that are on the market…..they contain no high fructose corn syrup and are litterally made from two ingredients: whole fruit and sugar. Not too bad, right?
Cherry Cream Cheese Pie
I , who doesn’t even like cheese cake (which this recipe is very similiar too), love this desert! Definitely good for a holiday treat!
For the pie crust (highly recomend making your own…its deliscious!):
*1 1/2 cup all purpose flour
*1/2 cup crisco ( I know gross right…but it’s a necessity for perfect crust)
*1/4 teaspoon salt
Preheat oven to 450 degrees. Place all ingredients in a bowl and mix with hands. The mix should feel moist and should stick together.
Form into a large ball
Then roll out onto floured wax paper. (remember to wet the counter so the wax paper will stick to it)
Press dough into a pie dish and makes small fork holes on the bottom.
Rub with a tiny bit of milk and place in oven on the highest rack. Bake for about ten minutes.
For the Filling:
1-8 oz package of cream cheese (could use low fat to make this a bit healthier)
1 can sweetened condensed milk
1/3 cup lemon juice
1 tsp. pure vanilla extracr
1 can cherry pie filling (like LUCKY LEAF!)
Soften cream cheese and beat it. Add sweetened condensed milk gradually and beat well until blended well. Pour mixture into the crust and chill in the refridgerator for 2-3 hours.
Remove from fridge and spread with cherry pie filling. Store in the refridgerator!
The Lucky Leaf pie filling was perfect in this recipe…..perfectly sweet with a smooth consistency. This was actually one of the best pie’s my mom has ever made!
To counter that more so indulgent treat, I have a healthy snack to share as well.
Apple Cider Granola
This recipe doesn’t make too much so you could definitely double it! Also, it’s not too sweet…juat right for a light and crunchy snack.
*1 cup rolled oats
*1/4 cup walnuts or pecans or almonds
*1/2 cup dried fruit ( I used golden raisins, currants, chopped dried figs, and apple chips)
*1/4 cup ezekiel cereal (or another crunchy wheat cereal like Grape Nuts)
* 1/4 cup puffed cereal (I used puffed millet)
*cinnamon to taste
*2 tablespoons water
*3 1/2 tablespoons apple cider
Preheat the oven to 305 degrees. Mix all ingredients into a bowl and make sure all dry ingredients are coated evenly by the liquid. Put aluminum foil on a baking sheet and spread granola on top. Bake for 22 minutes.
