Happy Olympics everyone! I know they’re all you’ve probably been hearing about lately but you have to admit they’re pretty exciting!
Something about watching people compete for your country just makes everyone so patriotic. I’ll admit I totally got sucked in to the men’s road race this morning….the last ten minutes were the most exciting of course but they definitely helped me power through the tough part of my workout. Yay for fellow athlete motivation (though I would hardly compare my level of fitness to that of an Olympic athlete!).
What events are you most looking forward to?
I really like any of the endurance events (running, cycling, etc.)….but I would have to say gymnastics is the most ‘fun’ to watch! Those 5 girls are just SO talented….and the guys aren’t bad to look at either :).
Oh and I have to ask….what were your thoughts on the opening ceremony?
The other day I mentioned a few reviews I had coming up and even gave you a little sneak peek of something I made from the samples I received. Remember those crepes?
I surely do. They were pretty much gone within 24 hours of making them. If that says anything.
You might be surprised, however, about the company behind those delicious treats….
I had always thought of Melissa’s as a vegetable focused company and never really knew that they carried a ton of other products! So you can imagine my surprise when I opened up the package they sent me and not only found some amazingly fresh produce (how do they do it?!) but some awesome packaged products as well.

One of the beet products kind of exploded before getting to my house….but after trying the other beets, I am sure it would have been just as good!
The potatoes and shallots were perfect for roasting on the grill and my parents and I really enjoyed them paired with some fish and other roasted veggies! I also really liked the steamed lentils! It was cool having a protein source readily available. Lentils can take a long time to cook sometimes, so it was definitely convenient having them at my finger tips for salads and such.
But my favorite product of the whole bunch was undeniably….THE CREPES.
Can you believe I have never actually had crepes before now? Now I know I have to make some homemade ones!
They were so thin and light and not overly sweet! Perfect for a sweet OR savory filling! And made with completely recognizable ingredients as well….which is always a plus!
My mom and I decided to try the sweet route though for our first experiment. It worked out perfectly because there was a simple, yet delicious, recipe on the back of the crepe package.
Raspberry Mandarin Crepes
–lightly adapted from Melissa’s crepe recipe–
-1 can mandarin oranges (in their own juice) chopped
-1 jar of 100% fruit raspberry jelly
-1/2 tbsp lemon juice
-2/3 cup light cottage cheese
-1/3 cup powdered sugar
-3/4 cup non fat sour cream (or greek yogurt!)
-1 tsp lemon zest
Blend cream cheese and powdered sugar with an electric mixer until smooth. Then add sour cream, juice, and zest and blend again. Gently mix the chopped mandarins into the mixture, being careful not to over mix and release to much of the mandarin juice.
Spread about 1 1/2 oz. of the mixture evenly on each crepe. Roll the crepes burrito style and set aside. In a small sauce pan, heat 3/4 of a jar of jelly with a little bit of water until it thins out a bit and becomes drizzle-able (like that verb?). Place the crepes in the container you plan on storing them in and drizzle with raspberry sauce. Serve immediately or store in the fridge for later munching!
Okay, so maybe not the healthiest of recipes…but as far as desserts go these are pretty light! Both in nutrition and density! You will definitely have room for these babies after a meal. Or even for a meal! Brunch anyone?
