I have been with this guy all weekend studying for my Chemistry regents exam. Between my tournament games I had to hit the books :(.
Thankfully today was officially my last day of school!!! Summer here I come. I have a Trigonometry and a Global exam tomorrow and a Chemistry exam Wednesday…..and then no more school work for 87 glorious summer days!
I am so excited to get my Summer started and can’t wait to embark on all the fun things I have planned. One thing I hope a to get back to this summer is horseback riding. I began riding when I was three and even competed regionally in competition, but as I got older and got involved with other activities I stopped riding.
I really want to start again though and have always loved going out to be with the horses at my Aunt’s farm. I’ll keep you updated on my horseback riding endeavor!
I wanna share with you guys what we had for dinner last night:
Rainbow Trout packets with Gooseberrie Salsa and a homemade Kale Salad (inspired by the Whole Foods Kale Salad I had in San Diego). YuM!
I can’t share the fish recipe with you because it is from Clean Eating (I am telling you guys..the recipes are AMAZING!), but I can say that it was one of the most unique things I have ever eaten. I have never had gooseberries before and they are really something! Like a mixture of kiwi and raspberry with a hint of tartness and the texture of a cherry tomato. We had them cooked so I can’t say how they taste raw…but all cooked up they were delish with the trout.
The kale salad was similar to the one I had with my sister…with a few variations because I couldn’t remember exactly what was in it:
~1 bunch kale (washed and chopper into thin ribbons)
~1 red bell pepper (cut into thin strips)
~1 bulb of fennel… I used the one from my garden!!! (cut into thin strips)
~ 1/2 cup of raw sunflower seeds
For the dressing;
~ 1/3 cup orange juice
~1 tablespoon dijon mustard
~ 2 tablespoons EVOO
~ 1 tablespoon balsamic vinegar
Mix all ingredients for salad in a large bowl. Combine ingredients for dressing and pour over salad. Massage with hands or toss to coat.
This was a really good dinner. So happy to have such summery foods back in my life!
Speaking of something that’s back in my life:
Mary’s Crackers! Love these crunchy, seedy crackers. With all the samples I have been receiving lately I forgot to pick these up at the store. But now they are back and I am loving them more than ever! I made a snack today with some Mary’s Crackers, Dr. Krackers (seedlander, cherry semolina, and seeded spelt), and some Snyders whole wheat and oat pretzels. Crunchy? Oh yes.
