There’s been talk of diets, green living, thyroid health, and even adult beverages around here lately. A little mix of everything, but not many recipes! My apologies for that, friends. I know that the past week has been lighter on recipe posts than usual and to be honest, I’ve missed them! I am sure you have too. Especially with back to school season in full swing, I know there are a lot of parents and college kids out there looking for quick n’ healthy options for meals and snacks.
True to my blog’s name, I am being a Healthy Helper today and bringing you a recipe for my latest snack OBSESSION. It’s fits the bill for healthy and is the definition of quick. Less than 5 minutes prep time total with only 2 minutes of cooking. How can you beat that? Plus it can be easily made in a dorm room or in a hurry for a hangry kid after school!
Any guesses yet as to the type of recipe I am sharing today?
If you said a mug cake, you’d be 100% correct! Can you believe it’s been almost TWO YEARS since I shared my last mug cake recipe on the blog!? Blasphemous!!
It’s not that I purposely steered away from sharing them, but the mug cake recipe market has seemed SO over-saturated in the blogging world these past two years. EVERY ONE is sharing mug cake recipes and to be honest, they all seem like slight variations on the same exact recipe.
I swore to myself I’d only share another mug cake recipe on here if it was something truly special…something different.
I don’t mean to toot my horn, but this recipe nails both of those criterion!
It’s got the glorious pairing of mint and chocolate.
It’s full of antioxidant-rich matcha.
It’s gluten-free, grain-free, and easily made vegan.
And like I mentioned above…
It comes together in minutes!
But let’s stop with the chit-chat! Let’s just get to the goods.
- 2 tbsp coconut flour
- ¼ tsp baking powder
- 1 tsp matcha green tea powder
- ½ tsp dried mint
- 1 tbsp Pascha No Sugar Added Chocolate Spread (or another chocolate spread)
- 1 large egg white or flax egg
- ⅓ cup non-dairy milk of choice
- chocolate flavored liquid stevia, to taste
- 1 tbsp mini chocolate chips, optional
- In a small mixing bowl, combine all the dry ingredients and mix well. In a separate bowl, whisk together wet ingredients.
- Add your wet ingredients to your dry ingredients and mix until a sticky dough is formed. Add more liquid if the dough is too crumbly.
- Transfer to a ramekin or mug that has been sprayed with cooking spray or rubbed with coconut oil.
- Microwave for at least 2 minutes, or until the center comes out completely clean. Allow to sit for 1 minute before removing and eating.
This mug cake is SO soft and cake-like. Unlike some mug cakes that come out hard, rubbery, or too dense…this one is incredible fluffy and light! I think it’s because it uses NO protein powder…just healthy, real food ingredients.
I like eating mine with a drizzle of chocolate sauce and extra mini chocolate chips. The more chocolate, the better…am I right?
If I still did WIAWs, you’d be seeing a WHOLE LOT of these mug cakes lately! I just can’t get over how convenient they are. It’s like dessert anytime of day at the drop of a hat. But this recipe begs the never ending debate of what’s longer? A microwave minute or a treadmill minute? 😉
