Shamrock Shakes are back. Thin Mints are EVERY WHERE. And that quintessential flavor of March, chocolate and mint, seems to be captivating everyone’s taste buds!
I am not complaining. Aside from chocolate and peanut butter and chocolate and orange…chocolate and mint is one of my ALL time favorite flavor pairings. I know mint is hit or miss for some people…but I’ve always been a fan. Whether it was mint-ting-a-ling ice cream cones as a kid or those delicious Andes candies around Christmas time, me and chocolate/mint go waaaaay back. 😉
Throw in a little coffee flavor too and I am in HEAVEN! I think you will be too after you see today’s perfectly timed, seasonal recipe. St. Paddy’s Day is just around the corner, so I figured it was the perfect time to share my new Mocha Mint Protein Bites with you all!
That’s right. You’re getting all the chocolate-mint flavor you love and know during this time of year PLUS a hint of cappuccino flavor from my favorite plant-based protein from Nuzest!
Their protein is high quality and 100% made from golden pea protein. Not to mention is tastes amazing and is sweetened with fruit! I can’t even pick a favorite flavor because they are all so good…right down the clean lean, natural (unflavored) variety.
It’s hard to find a vegan protein that’s good for making treats with, but something about Nuzest’s formulation just WORKS. In addition, you’re getting an even greater boost of protein in these scrumptious bites from the use of chickpeas! they give them their doughy, soft texture too. But don’t take my word for it! Make these babies yourself and just see how much you like the combo of mint, chocolate, and coffee together!
- 3 tbsp quick oats
- ½ cup chickpeas, rinsed and drained (78 grams)
- 4 oz unsweetened applesauce
- 30 grams Nuzest Cappuccino Protein Powder
- 1 tbsp cocoa powder
- 1 tbsp coconut flour
- ½-1 tsp peppermint extract (depending on how strong you want the mint flavor)
- 2 tbsp mini chocolate chips, optional
- In a food processor, combine chickpeas and applesauce until pureed. Place mixture in a large bowl and add the rest of the ingredients. Mix with your hands until combined.
- Form in to 6 bite-sized balls and freeze for one hour before serving. Store in the fridge or freezer.
