Everyone has memorable holiday traditions. Usually having something to do with family or food. Well, one of my favorites from childhood that I looked forward to every holiday season involved BOTH! Those are the best kind aren’t they?
Every Thanksgiving or Christmas morning, my dad and I would wake up early, waaaay before anyone else in the house, and go to our favorite bagel shop down the street to be there for when they first opened (yes they were open for a few hours on holidays specifically for people like us! 🙂 ).
We would pick up a half-dozen ‘christmas’ bagels to have back home with the fam while they were still warm and soft from the oven. Our special mix included Cinnamon Raisin (for my dad), jalapeno Cheddar (for my sister), Everything (for my mom), and for me? BLUEBERRY!
I actually am a fan of most bagel varieties and nowadays I hardly ever choose blueberry, but back then at this one specific shop, they were just too good fresh out of the oven to pass up. The blueberries were still warm and perfectly placed throughout the soft chewy dough. I still have not been able to find a blueberry bagel that I enjoy as much as those ones from the since closed local bagel shop.
Well, that is until today. Like most foodies, if I can’t find something anymore, I dive right in and attempt to make it myself!
So if you haven’t guessed….I made bagels. Blueberry Bagels. Paleo, vegan, GRAIN-FREE blueberry bagels to be exact. I didn’t want ANYONE to be left out on the bagel goodness so I had to make them appropriate for ALL lifestyles, ya know?
- Dry Ingredients:
- 3 tablespoons ground flax
- ½ tsp xanthan gum
- 2 teaspoons cinnamon
- ½ cup coconut flour
- ½ cup potato starch
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Wet Ingredients:
- ¾ cup frozen Wild Blueberries, thawed
- ½ cup apple sauce
- 2 tablespoons water
- 1 tablespoon apple cider vinegar
- ¼ cup cashew milk
- Set the oven to 350F.
- Add the dry ingredients to a mixing bowl and whisk to combine.
- In a separate bowl add the wet ingredients and mix.
- Add the dry ingredients to the wet and combine.
- Form the dough into a ball with your hands. Put some oil on your hands so the dough doesn’t stick to them.
- Break the ball of dough into 4 pieces, roughly the same size.
- Roll each ball in your hands, then push your thumb through the middle, and shape the dough into a ring around your thumb.
- Smooth the bagels as best as you can with your fingers, then lay them on a parchment paper lined baking sheet. Leave a few inches between each bagel on the sheet.
- Bake the bagels for about 25 minutes.
Dense, chewy, and bursting with blueberry goodness! These paleo bagels will become your new favorite holiday breakfast. But they’re do good you won’t want to reserve them just for the holidays. These will quickly become an everyday thing in your house just like I have in mine.
No boiling required, easy to make, and not full of all the sugar and oil that traditional bagels are. Truly the breakfast bagel you can feel good about waking up to in the morning.
