Yep, that’s right. The city is already priming the sidewalks (I’m sure the streets are next!) for our first snowfall. NOT excited about that in the slightest.
Of course I’m not a fan of winter weather, but another thing I dislike about the season is the lack of fresh produce. No more Farmer’s Market shopping. No in season veggies and fruits at the store (or very few). It’s fresh food lovin’ gal’s NIGHTMARE.
Luckily, I just discovered that there are some future-minded farmers out there tackling this issue head on. Have you heard of modern farming? I’ll admit, I hadn’t before I was introduced to BOWERY…the modern farming company.
Bowery develops indoor farms across the country that create the ideal conditions for growing the purest produce imaginable. Not only do they make produce more widely available no matter what season it is, but also they are REVOLUTIONIZING the farming industry as we know it.

Well even more amazing is the fact that I got to TRY some of their produce! Bowery sent me some of their greens as well some fresh basil…my all time favorite herb to cook with.
Inspired by coziness of the season and the FRESHNESS of the Bowery basil…I decided to bake some bread. Savory bread, to be exact.
Now you may be thinking “with all those greens, why didn’t you make a salad?!” Don’t worry, friends…I did! But a salad is not a complete meal. Served with my Paleo Pesto Bread however, and a salad transforms into a well-balanced, satiating meal!
- 2 cups Bob's Red Mill almond flour
- ¼ cup psyllium husk powder
- 1 tbsp baking powder
- ½ tsp sea salt
- 5 large eggs (beaten)
- ¼ cup coconut oil
- ½ cup warm water
- 1 container of Bowery fresh basil leaves (.75 oz), finely chopped
- 2 tsp garlic powder
- 1 tsp red chili flakes
- prepared dairy-free pesto, for topping
- Preheat the oven to 350 degrees F.
- In a large bowl, stir together the almond flour, psyllium husk powder, baking powder, and sea salt.
- Stir in the eggs and melted coconut oil, then finally the warm water.
- Fold in cheese, basil leaves, and seasonings. Mix until just combined.
- Transfer the batter to a well-greased loaf pan. Spread evenly throughout and then top with prepared pesto.
- Bake for 50 minutes. Cool completely before serving.
