Crunchy pecans combine with savory cheese to create a delicious topping for flavorful tilapia fillets! This main dish is perfect for a quick, healthy weeknight meal and will impress even non-seafood lovers!
You guys. I am officially a marathoner. YES. It happened and I couldn’t be more thrilled. I plan on writing a whole post about all the details of the weekend, but for now I just had to share that big news. I am still on cloud nine from the race and seriously riding that runner’s high all the way home. (While you see this I am still in transit back home from my ‘destination’ race!)
Today’s post does have something to do with my marathon training though so I thought it was appropriate to share after the big race, ya know?
Let’s talk about marathon training for a second. It’s grueling, it takes up a lot of time and will power, and it’s TIRING. I’ve been taking naps almost every afternoon and making sure I am getting a long night of sleep each evening. Another thing? I am sticking to QUICK, EASY meals.
There’s nothing I want to do less than cook a crazy difficult, hard to put together meal when I am dealing with major RUNGER and just need to get fuel in my body ASAP. Throughout my training, and especially as mileage increased, it was important that my meals were efficient and NUTRIENT DENSE.
Believe it or not, a few new recipes actually resulted do to this new approach to food. One of them being the dish that I am sharing with you today!
If you don’t know by now, I am a SEAFOOD LOVER. A seaFOODIE, if you will. 😉 I’ve never had a fish I don’t like and I’ll pretty much eat some sort of seafood everyday if I have the chance. My favorite brand to use is Bumble Bee SuperFresh® because they have such a wide range of products and all of them are so affordable. Not to mention the high quality! I’ve used their seafood to make a wide variety of dishes and I don’t see myself stopping any time soon. See these recipes to get an idea of what I am talking about…
Hawaiian Tuna Burgers (one of my most popular recipes!)
See what I mean? Only deliciousness results when you use Bumble Bee!
Recently, I picked up a pack of their Bumble Bee SuperFresh® Tilapia with Garlic and Extra Virgin Olive Oil to have on hand as a healthy protein-rich addition to a weeknight meal. (Find them near you!) I love the Bumble Bee SuperFresh® line because the fish is no mess, no fuss, perfectly cooked, and delicious every time! It’s seasoned with only real, whole food ingredients…all recognizable and could be found in your own kitchen!
Sometimes frozen fish has an odd or very fishy smell to it, but this is not the case with Bumble Bee SuperFresh® at all. There’s no detectable odor and you can cook the fish straight from the freezer. I’ve tried the fish all on its own and it’s amazingly tasty. But also to get some added healthy fats and calories during marathon training, I decided to jazz it up with a fun topping that I think you’d love to try as well!
My Pecan Parmesan Crusted Dijon Tilapia was born out of necessity one night when I needed a quick protein-rich and healthy fat-filled meal after a long run (of course I ate it alongside a hefty dose of carbs too!). I was RUNGRY, didn’t feel like waiting a long time for my food, yet wanted something tasty and satisfying.
That’s where my Bumble Bee SuperFresh® Tilapia with Garlic and Extra Virgin Olive Oil saved the day. It cooks up in under 25 minutes, comes with its own cooking parchment, and is perfectly flaking and tender once done. The added crusting and sauce I created only enhance the already amazing fish that Bumble Bee has harvested.
