Soft, cookie dough-like bites of tropical deliciousness! These bites are packed with fruity, fresh pineapple flavor and great for welcoming the warm weather season. Vegan, gluten-free, nut-free, and no added sugar, this snack is suitable for any type of diet.
Just when I thought food holidays couldn’t get anymore specific (hello national “eat your noodles” day and national cheese doodle day!), I find out about one dedicated to the most random dessert ever. Pineapple Upside-Down Cake Day!
Not the most popular dessert, at least where I’m from, so I was surprised that a whole day was dedicated to this tropical delight. Sure, I’ve had Pineapple Upside-Down Cake once or twice before. But my experience with it was never memorable enough that I’d make it myself.
It’s pretty basic: cake baked with pineapple rings on top, canned cherries in the middle of each ring, and a mixture of butter and sugar glazed over everything. That’s where my problem with it begins. I am NOT a canned cherry fan whatsoever! Give me fresh cherries any day, but the canned kind? Blech! I think it’s a texture thing.
Weirdly enough though, fate shined down upon me the other day when I simultaneously heard about this holiday AND found myself with some extra pineapple lying around that needed to be used up. It was from making a batch of my Hawaiian Tuna Burgers, in case you were wondering. 😉
So with crushed pineapple in hand and some inspiration from my random food holiday discovery. I set out to make fruity n’ fresh snack that’s perfect for the upcoming season of warm weather!
What resulted, was something so simple, yet so delicious. And of course, I’m sharing with all of you. Can’t celebrate the big holiday on my own ya know?
So let’s celebrate together! Put on your hula skirt and lei, tune the channel to Spongebob, and dig into some of my Pineapple Upside-Down Cake Bites!
- ½ cup oats, ground into flour (40 grams oats)
- ½ cup chickpeas, rinsed and drained (65 grams)
- ¼ drained crushed pineapple (60 grams)
- 1 tbsp coconut flour
- ½ tsp cinnamon
- ½ tsp vanilla extract
- In a food processor, combine all ingredients and blend until uniform.
- Form in to 6 bite-sized balls and store in the freezer or fridge.
More appropriately, they should be called cookie dough bites because they legit have the texture of soft n’t fluffy cookie dough. These bites are not only perfect for this random holiday (duh!), but ‘anytime’ snacking as well.
They’re vegan, gluten-free, nut-free, and are totally fruit-sweetened, so anybody can enjoy them without a care in the world. And I’ll have you know, they’ll be gone quick. The texture alone is enough to make me gobble them up immediately. In fact, it would be totally okay to just make the batter and eat it straight from the bowl. Personal bowl of cookie dough, anyone? 😉
