They really are aren’t they!?!
Before I get started, I really enjoyed everyones comments on my last post! Seems like we’re all pretty much on the same page about those nasty advertisements!
Even if the weather is cooperating exactly how I’d like, I still had a fantastic day.
Yesterday my two best fraaanz asked me if I would take them to hot yoga this morning. I agreed but I actually wasn’t that excited to go. Something about hot yoga in already hot weather just didn’t sound appealing. But they wanted to try it out so I thought why not?
Well it ended up being one my best classes yet! That always happens….you feel like you don’t want to do something, but then you force yourself to do it and end up getting something really great out of it!
My favorite teacher was teaching and I was able to get into a lot of positions I usually struggle with. Maybe my flexibility is improving a bit? I’d like to think so atleast 🙂
My friends definitely struggled a bit but I think they felt accomplished afterwards. Hey, 90 minutes in 110* temps is definitely a challenge!
Then my mom took me with her to get her nails done. She and my dad are going to a huuuuge gala tonight for a local hospital so they both were getting all dolled up all day! Here’s a pic of them before they left:
How cute are they? I felt like I was sending them off to the prom 😉
I got a manicure while I was waiting for my mom and studied some economics at the same time.Yuck! One more major exam to get through and then just the easy ones left.
After we stopped at a SUPER Target near the nail salon. The Target near us is SUCK-EY, so it was nice to go to a really nice one! Of course I had to get some souvenirs:
As if the day wasn’t full enough, I came home with an urge to cook something! I made one staple and one new recipe…..tomato lentil soup (make this every week to bring in my lunch…..it’s just THAT good!) and Subtly Sweet Buckwheat Cereal.
The soup ended up being like a triple batch! I am gonna be eating soup forever!!! Totally okay.
Then I started to experiment with making some buckwheat granola/cereal like I mentioned I wanted to do the other day.
I wanted to try and make it using this big jar of apple butter I have and my fridge and I was pretty happy with the way it turned out.
Subtly Sweet Buckwheat Cereal
*this cereal is chewy with a slight crunch….it’s subtly sweet and has a great cinnamon-y aroma*
1/3 cup+2 tbsp rolled oats (I used a mix of rye, wheat, and kamut oats)
2 tbsp diced dried apples
2 tbsp raisins (see note)
1/3 cup+3 tbsp buckwheat groats
1/3 cup apple butter
1/4 cup water
a heavy sprinkle of cinnamon
1/4 cup chopped walnuts (optional)
1 tbsp canola oil (optional)
Preheat oven to 400*. In a small pot mix water and apple butter over medium heat for about 3 minutes. Once heated, mix all ingredients (apple butter included) in a bowl.
Once fully and evenly combined, spread mixture onto a parchment paper lined sheet and bake for 13 minutes.
Remove from oven and remove from pan. Let granola cool on parchment paper….it will crisp up a bit as it sits.
Note: if you don’t like to bake your dried fruit (which makes them super hard and chewy…which I like lol.) then you can leave them out for the baking and just stir the raisins in at the end.
Hmmm I can’t wait to eat this with some ice cold almond milk or on some hot oats. Yum is all I got to say.
Phew, after this long and fun day, I am looking forward to relaxing with the pupster and trying to stay up for ED HELMS (Andy from the Office of course…but I know you all knew that already!!!) on Saturday Night Live tonight! Wooo! So excited!

Random Q: Do ever get cuts in your mouth from eating fruit?
For some reason lately, my mouth has been burning horribly every time I eat fruit! It’s such a pain because I love fruit! And I definitely eat it numerous times a day. I think it might be because I chew on one side of my mouth more than the other, but I’m not sure 🙁
