A savory breakfast bread sensation! This unique loaf is paleo, gluten-free, and full of amazing ingredients. Made with starchy green banana flour, this is a breakfast that will satisfy your taste buds and keep you going all day long!
BOY, do I have a fun post for you today, friends!! In fact, it’s my FIRST EVER video collaboration with my blogger friend, Gigi!
You might know her from the famous YouTube channel, Gigi Eats Celebrities, but I know her as my blogging buddy who is JUST as obsessed with seafood as I am. But we’re not talking about seafood today….no, far from it. We’re talking about a unique ingredient that both of us had on hand but were totally stumped on what to make with it.

Well I personally had not, and when Gigi approached me about coming up with a Gigi-approved recipe using it, I couldn’t turn down a challenge. I love getting creative in the kitchen, but given Gigi’s dietary needs (no sugar, gluten/grains, dairy, fruit, soy, or nuts…I think that’s it, right Gi?) I knew I had a big project in front of me. Luckily, I SCORED on the first try and came up with an awesome paleo breakfast bread recipe that’s totally savory and delicious.
I call it Savory Banana Flour Breakfast Bread. Now just because banana is in the title does not make this a sweet bread. It’s totally on the savory end and has tons of interesting flavors from the spices and the salsa. I would actually love to play around with adding some more veggies to it!
Since it’s made with eggs, you’re getting protein, good carbs from the banana flour, and healthy fats from the use of coconut products. A totally well-rounded meal if you have a slice or two for breaky!
- 1⅓ cups NuNaturals Green banana flour
- ¾ cup pumpkin
- 4 eggs
- ½ cup coconut milk
- 2 tablespoons coconut oil, melted
- 1½ teaspoon baking powder
- ½ chili powder
- ¾ cup salsa
- a pinch of sea salt
- Trader Joe's Everything Bagel Seasoning, for sprinkling on top
- Preheat oven to 350° degrees.
- Place all of the ingredients into a large mixing bowl and combine well.
- Spoon mixture into a well greased/sprayed loaf pan.
- Place into the oven and cook for 45-50 minutes, or until a knife comes out cleanly from the center of the bread.
- Serve warm.
Like I said above, this bread is not only paleo and gluten-free, but it’s 100% Gigi-approved! She even made the recipe on video for proof…check it out!
