Happy Apocalypse Eve! I haven’t read into the whole “end of the world” thing and frankly
know think its a load of crap. However with everyone talking about it, it has got me thinking about how I would feel if my life ended tomorrow. A few months ago, I probably would have been pretty indifferent. I was incredibly stressed out, plagued with anxiety, and just not in a good place mentally. Everyday seemed like a struggle and was not present at all. My relationships with my family and friends were suffering and I just felt stuck.
Fortunately, taking some time away from the blog and from a lot of aspects of my life in general, allowed me to refocus myself and make some positive changes in my life. I’ve been more of myself in these past few weeks than I have in a few years! I feel so much happier. I am laughing constantly, goofing around, enjoying my days fully, and not thinking about what’s in the past and what’s to come. So, if the world were to come to an end tomorrow…sure, I’d be pretty upset that I wasn’t able to accomplish all that I have planned, travel to the places I want to see, or cross things off my bucket list, but I’d be content with who I am right now and how I left things with my friends and family.
Just a thought I guess. (FYI…its been tomorrow in Australia for a while now!)
Anyways…how about some more uplifting stuff besides the world ending! HA!
I have two recipes to share with you today as well as my answers to the Liebster Award survey that people have been tagged with!
1 15oz can of chickpeas, drained and rinsed
2 tbsp whole wheat flour
2 tbsp whole wheat bread crumbs
1 small onion, finely diced
3 cloves of garlic, finely chopped
1 teaspoon fresh squeezed lemon juice
1 teaspoon cumin
1 teaspoon coriander
1/4 teaspoon cayenne pepper
smoked paprika, chili powder, thyme, and basil to taste
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon pepper
Preheat the oven to 400°. Lightly grease a cookie sheet for browning the patties.
Empty the beans into a large bowl and mash with a potato masher. To the large bowl add onion, garlic, lemon juice, spices, flour, bread crumbs, baking powder, salt and pepper. Mix well. Form into patties and space out on a cookie sheet. Bake about 10 to 15 minutes on each side. 20 to 30 minutes total. Then remove from oven and saute both sides in olive oil until desired crispness is reached!
Peanut-butter Coconut Snickers Cookies
Adapted from my Triple Chunk Candy Cookies
1/2 cup smooth peanut butter
1/2 cup butter
1/2 cup coconut oil
scant 3/4 cup brown sugar
scant 1/4 cup white sugar
2 snickers bars, coarsely chopped
1/4 cup+ 2 tbsp unsweetened coconut shreds
1 tsp baking soda
1/4 tsp salt
2 3/4 cup white whole wheat flour
Preheat oven to 350. In a large bowl or stand mixer, beat sugar, butter, oil, and peanut butter together until well mixed. Then add in eggs and vanilla and beat until those are mixed in as well.
In a separate bowl, combine flour, salt, coconut, and baking soda. Slowly mix dry ingredients into wet ingredients (including the chopped candy pieces). Using clean hands, incorporate all the ingredients together and mix until candy bar pieces are evenly distributed.
On a parchment paper lined baking sheet, place 1-1.5 inch dough balls evenly spaced and press down slightly so they are a little flattened.
Bake for 15 minutes. Remove from baking sheet and cool on a wire rack. Repeat baking process until all dough is used up.
Instead of listing 11 facts about myself (I’ve done that NUMEROUS times on here!) and making this post uber long, I will just answer the 11 Questions Bee came up with.
Do you prefer coffee, tea, or neither?
I’m not a huge drinker of anything but water and juice, but I definitely get in the mood for tea AND coffee sometimes! They are both pretty equal to me in terms of preference since I only get cravings every once in a while! But for tea I really like Black tea.
What is your favorite dessert/treat?
Anything homemade! Right now I am loving the cookies that my mom and I made but really I am a fan of anything that is made from scratch. Not a huge chocolat fan though and would rather have that incorporated into something rather than be the main flavor. Fruity desserts are the best!
What is your favorite kind of animal and why?
Big: Horses-Talk about beautiful! They are just so powerful and majestic! Small: Dogs-They are just so loving and adorable! They serve no other purpose on Earth except to be loved and give love.
If someone could describe you in three words, what would they be?
Determined, conscientious, creative.
What is your biggest fear?
Not succeeding and not accomplishing the goals I’ve set for myself.
Did you experience a healthy or happy tipping point in your own life?
Like I mentioned above, probably these last few months. They were full of realizations and exploration of myself.
Have you ever broken a bone or had a serious injury?
I’ve never broken a bone believe it or not…but I was hit by two cars this summer and was pretty banged up each time from that!
What is your favorite childhood memory?
Too many to name…and I feel really lucky for that! I would say every Christmas holds a really special place in my heart because of how important it is to my family.
What are a few of your favorite movies?
This list is ALWAYS changing…I watch a TON of movies but off the top of my head: Schindler’s List, Remember the Titans, Horrible Bosses, Dan in Real Life, Rocky Horror Picture Show, Trade, Burn After Reading…
Do you prefer sweet, salty, savory, sour…?
I like sweet and salty together and sweet and savory together! Not a huge sour fan (does anyone remember War Heads from when they were little?! Those were torturous!). But if I had to choose between sweet and salty foods I would probably go with sweet more often.
What are your current fitness goals?
Short term: to do something active each day….whether that be mental or physical. Exercising your mind is just as important as exercising your body. Long term: to join a gym again, run an official half marathon, become a better swimmer (endurance wise), compete in a sprint triathlon, and improve my weight lifting capabilities!
