I’ll come right out and say it…I don’t get the whole ‘baked Quest bar‘ fad. Heck I don’t like Quest bars on their own, so I can’t imagine they’re any better baked. And who wants to have to bake a bar before being able to consume it? Not I!
That being said, I can see the appeal from the way people describe. Soft, doughy, almost fluffy in texture? It all sounds good to me. Who doesn’t love soft, baked goods that are still warm from the oven?
Here’s the thing, I’d rather have a homemade baked bar, than store-bought baked bar any day! What if I told you now you could make BAKED Quest bars right in the comfort of your own home without buying expensive boxes full of the real thing? I think you’d be into it.
Recently I was sent a fun package from SilverFern with a ton of their baking products to try out. What immediately caught my attention was their Apple Cinnamon Muffin Mix! I am a HUGE apple cinnamon fan. It’s just so comforting and warming. And the smell that fill your home when you bake ANYTHING apple is just amazing! I had high hopes for this mix given all the awesome ingredients, but I didn’t want to go the traditional route of just making muffins with it. That would be too easy for this kitchen experimenter. 😉
I decided to make bars…not just any bars though. High protein, low-carb, low-sugar bars that anyone would love to eat for a snack or post-workout refuel! I didn’t even mean for them to come out the way they did. I was envisioning a more firm, dense bar. But what I got was SO MUCH better! Soft, chewy, and so filled with apple flavor. They legit taste like apple pie, minus all the goo. 😉
- 1 cup Manna Sprouted Fig and Nut Butter (or other nut butter of choice)
- ½ cup applesauce
- ¼ cup Silver Fern Tino Fiber Supplement
- ½ tsp cinnamon
- 1 ½ cups Silver Fern Apple Cinnamon Muffin Mix
- 2 tbsp coconut flour
- 1 packet of plain instant oatmeal
- Mix together applesauce and nut butter. Add dry ingredients and mix until evenly combine. Line a loaf pan with plastic wrap, pour in batter, and spread evenly throughout the pan. Freeze for 1 hour before slicing into 6 bars. Pre-heat oven to 350. Place parchment paper on a baking sheet and place bars on top, Bake for 10 -12 minutes. Remove from oven and let bars cool for an hour before eating. Store in the fridge.
These babies are gluten-free and also very high in fiber from the SilverFern Tino Fiber Supplement I added to them. This bulked them up a bit, gave them great texture, and made them 10x more satisfying than your normal protein bar. Fiber + protein= fullness!
While we’re talking about the awesome products that SilverFern sent me to bake with, let me tell you a little bit about the company.
