To be honest, I am not a huge football fan. In fact, that’s putting it lightly. I really have NO interest in the sport. I am the person that only watched the Super Bowl for the commercials. 😉
With that said, I don’t turn down invitations to get together with friends and family for a few laughs and a chance to catch up…even if that means there’s a football game on in the background.
This past weekend I was invited to my friend’s house to watch a game…an indoor tailgate you could say. Of course I was excited to see her and her boyfriend (plus a slew of our other friends!) and even offered to make a dish for everyone to enjoy.
When I think of football tailgate parties (or even the upcoming holiday parties that we’ll all be attending), I think of bite-sized, hand-held snacks and appetizers that are easy to eat and DELICIOUS.
I’ve made all sorts of fun appetizers before. Like these or this for example. But one thing I haven’t tackled? Deviled eggs.
They’re a party staple! Everyone and their mother seems to LOVE them, yet I’ve been weary of them from a very young age. Just something about them never seemed appealing. Maybe because I am not a big mayo fan? Perhaps.
But you know me. Once I have something in my mind, I roll with it until I accomplish what I’ve set out to do. With a few fun ingredients at my disposal, namely the amazing Queso Dips from Rojo’s, I went to town creating a NEW KIND of deviled egg dish.
Have you heard of Rojo’s? They offer a complete line of fresh, restaurant-quality salsas and dips in several delicious flavors, including a new line of Queso Dips that I got to try. Deviled eggs call for a creamy filling, so I thought these dips would be the PERFECT replacement for icky mayo in the middle. I was right.
The Queso Blanco Dip that I chose to use is a mix of Monterey Jack & cotija cheeses, combined with zesty green chiles and jalapenos. So flavorful and rich!
You can tell upon first taste that Rojo’s makes their dips in small batches using premium, fresh-cut ingredients in order to deliver great, homemade flavor and freshness.
The Queso Blanco Dip is the STAR of this easy Southwestern Deviled Eggs recipe and truly packs these bite-sized snacks with tremendous flavor and creamy texture.
- 6 boiled eggs, sliced in half
- ½ a container of ROJO's Queso Blanco Dip
- Nutritional yeast and red pepper flakes- for sprinkling on top
- Scoop the yolks out from the eggs into a bowl and mash until smooth.
- Stir in the Queso Dip. Mix thoroughly.
- Scoop mixture into halved eggs. Sprinkle with spices to finish!
As I mentioned above, I was NEVER a fan of deviled eggs. However, this recipe totally changed the game! The simple swap of Rojo’s Queso Blanco Dip for mayo took these eggs to the next level. I can’t tell you how amazingly tasty the dip and yolk combination was! Rich, creamy, zesty, and perfectly spiced!
