These hearty bars are perfect for breakfast, snacks, or to satisfy your pizza cravings. They are vegan, gluten-free, and sugar-free as well.

You know when you ask a person what’s one food they don’t like? Well, one of the most common responses I hear is…olives. Not even any specific kind. People just write off the whole food group without even considering all the different varieties.
I for one LOVE olives and have eaten them ever since I was a little kid. My mom introduced them to me early and I’ve never really met a kind I don’t like! Kalamatas, green with pimentos, nicoise, cerignola…I like ’em all! Sort of like my love of seafood, I don’t discriminate when it comes to olive varieties. But one type in particular holds a special place in my heart….the black olive.
The simple, traditional black olive. They were the first kind I ever tried and I fell in love with their hard to describe salty, flavor. I was one of those kids that used to put them on my fingers and bite them off one at a time! Hey, ya gotta have fun with your food, right?
Back then I just liked them for their unique savory taste, but nowadays I like them even more for all the health benefits they provide. As an Italian, I have natural affinity for the Mediterranean diet and olives are certainly a part of it. They’re high in monounsaturated fat (one of the ‘good’ kinds of fat!). These healthy fats are associated with reduced risk of cardiovascular disease, increased brain function, and increased longevity! No wonder there is a Blue Zone in Italy. Those olive lovers live forever. 🙂
The good thing is you don’t have to go all the way to Italy to get your hands on quality, nutritious olives! California Ripe Olives are grown right in the USA and their bursting with vitamins and nutrients. They are high in vitamin E (.25 mg per serving), iron (.49 mg per serving), vitamin A (60 IU per serving), and fiber (.5 grams per serving).
I love snacking on olives all on their own, but I recently I started to brainstorm about how I could incorporate them into a savory baked good. Olives are frequently in salads, pastas, pizzas, and tapenade…but what about in a snack bar?
Well, now they are!
My Savory Vegan Pizza Snack Bars are bursting with mediterranean flavor from the addition of California Ripe Olives and sun-dried tomatoes. They’re spiced with traditional pizza herbs like basil and oregano and get a hint of cheesiness from nutritional yeast. Best of all their brimming with gluten-free whole grain goodness and 100% vegan.
- 2 cups quick rolled oats
- 1 teaspoon sea salt
- 1 tbsp dried oregano
- 1 tbsp dried basil
- ½ tsp red chili flakes
- 2 tbsp nutritional yeast
- 2 tbsp ground flax
- 1 tbsp tomato paste
- ¼ cup sun-dried tomatoes, finely chopped
- ½ cup California Black Ripe Olives, finely chopped
- ½ cup raw cashews , roughly chopped
- 1¼ cups unsweetened cashew milk (or other nondairy milk)
- Preheat oven to 350F. Line 8-inch square baking dish with parchment paper.
- In a medium bowl, combine oats, salt, herbs & spices, nutritional yeast, and ground flax. Finely chop the sun-dried tomatoes, olives, and cashews. Add to oat mixture. Add milk and stir to evenly combine.
- Press mixture into prepared baking dish and spread evenly. Bake for 30 minutes.
- Let cool on wire rack. Then cut into bars/squares. Store in airtight container. Keeps well in the fridge for 3 days.
Once you try these bars, you’ll never look at olives the same way again. Even when tested by the staunchest of olive haters, they passed with flying colors and were deemed the ‘best thing I’ve ever made’. With a review like that I knew I was onto something good and I just had to share.
So whether you’re craving pizza, looking to switch up your typical snack choices, or want add some healthy fats to your diet…these bars are for you! They even make for a great savory breakfast as their texture is very similar to baked oatmeal. Soft, dense, and doughy….delicious!
