Guys, I have a problem. A good problem, but a problem nonetheless. I have a stockpile of recipes (and POSTS!) burning a hole in my drafts folder. I’ve done so much drafting over the past few months and have had so many ideas for new posts, that I now have over 20 that I still need to publish. I know when the semester starts I’ll be thankful that I have some already prepared, but there’s just so much I want to share with you all right now.
My first order of business is to start sharing some of the recipes I’ve been teasing you all with! Starting with these Savory Cauliflower Cookies! I was hesitant to call them cookies as they’re very soft and more like a muffin top in texture, but I’m a fan of alliteration, and Cauliflower Cookies sounded better than Cauliflower Muffin Tops.
If you’ve ever made a cauliflower crust, then you know cauliflower has a distinctive taste in baked goods. If you like that taste, then you’ll like these!
They are great for a snack when you don’t want something sweet and want to fit some extra veggies in without making a smoothie or having something like cruditĂ©s and dip. You get the chew and texture of a carb-y snack with the nutrition of a veggie filled one!
Savory Fennel Cauliflower Cookies

Ingredients (5 cookies)
- 2 cups frozen cauliflower (225g)
- 2 tbsp coconut flour
- 2 tbsp egg white protein powder
- 2 tbsp unsweetened applesauce
- 3 tbsp liquid egg whites
- 2 tbsp almond milk
- 1 tsp baking powder
- 1/4 tsp fennel seed
- 1/4 tsp rosemary
- cinnamon, to taste
- sweetener, to taste (if you prefer some sweetness)
Instructions
Preheat oven to 350. Cook cauliflower in the microwave for 2 minutes (or until soft). Combine all ingredients in a food processor and blend until smooth. Divide batter into 5 equal circles on a parchment paper lined baking sheet. Cook for 25 minutes. Cool on a wire rack.

I made this batch and stored them in the freezer to thaw out for snacks when I wanted! They are great spread with a little humus and even crisped up a bit in the toaster.
