March is here! You know what that means.
Commence all the green food recipes across the blogosphere! In anticipation of St. Patrick’s day, everyone will be sharing their greenest, most festive recipes for this time of year.
Well, I’m not one to follow the crowd….but green food? That’s something I can get on board with! Green means veggies to me and you know I have a love for adding veggies to all sort of baked goods and bites. So expect a few fun-colored recipes over the next few weeks!
Green food is also appropriate because, to me, March is the (unofficial) official start of spring! Sure the weather still stinks…but things are starting to shift and I am counting down the days until all the trees start budding and the grass starts showing. Time to welcome back some color into this dreary grey/brown winter world!
Speaking of adding color, today’s recipe will help you add some color to your diet. Unlike some other bites I’ve made, the veggie ingredient isn’t so secret. In fact, it’s right in the name! ZUCCHINI.
My mom used to make fresh-baked banana zucchini bread all the time when I was little but she hasn’t made it in years! The other day I saw Emily feature a delicious looking version of that bread on her blog and I got a major craving for the zucchini goodness.
Not being able to find my mom’s original recipe left me at a loss. But that dilemma was resolved quickly when I decided to make my own version of my childhood favorite!
I, of course, added a little Healthy Helper flare to them and also made them no-bake, gluten-free, and vegan. Gotta make the zucchini bread goodness accessible for ALL lifestyles, ya know?
- ½ cup of grated zucchini
- ¼ cup dried white mulberries
- 1 tbsp apple butter
- ½ cup rolled oats
- ½ tsp vanilla extract
- ¼ tsp cinnamon
- ¼ tsp ground ginger
- ⅛ tsp nutmeg
- 2 tbsp coconut flour
- Grate a half a cup of zucchini. Squeeze out excess liquid using paper towels. Place zucchini, apple butter, vanilla, and mulberries in a food processor and process until smooth. Add oats, coconut flour, and spices. Blend until evenly combined. Remove mixture from food processor and divide into 6 equal bites by rolling the dough in your hands. Place in the refrigerator or freezer to set! Store in the refrigerator or freezer.
Zucchini bread bites that taste just like a fresh-baked loaf without any of the complicated bread making or baking. Just mix, form into balls, and satisfy though zucchini bread cravings in a pinch!
You could even add cocoa powder to the original recipe to make a version of Chocolate Zucchini Bread Bites! I don’t know why I didn’t think of that to begin with as I LOVE Chocolate Zucchini Bread.
Whether you make these in the spirit of St. Patrick’s Day or just to celebrate the oncoming of spring, you’ll love their tasty flavor and nutrient density! Fun to eat too! Which we all know is just as important. 😉
