It only takes 3 simple, every day ingredients to create these lusciously fudgy peanut butter blondies! Dense and delicious, biting into one of these bars will transport you to peanut butter heaven. Vegan, grain-free, and easy to make!
Maybe it’s a coincidence, or maybe I had a sixth sense…but it turns out I posted that picture just in time for National Peanut Day this week! That’s right, September 13th is National Peanut Day! I had no idea there was another peanut themed food holiday for the rest of the year what with the fact we’ve already had National Peanut Butter Day AND National Peanut Butter Lovers Day.
The food holidays in September are really impressing me though! First, the whole month is dedicated to potatoes, then we had I Love Food Day and National Hot Dog Day…and now this?! All my favorite, fun foods are being honored in one amazing month. Apparently the end of summer/start of fall is the REAL start of the holiday season as opposed to November. 😉
Anyways, with National Peanut Day upon is I of course had to share a peanut-filled recipe with you all. One that I’ve not only been holding onto for a while, but also that is one of my FAVORITE RECIPES OF ALL TIME.
Sure it combines some of my favorite foods, but more than that it’s just so darn easy to make! Easy and epically delicious.
The recipe I’m referring to would be my long-awaited 3 Ingredient Peanut Butter Blondies!
- 155 grams chickpeas (about a 1 cup), rinsed and drained
- 1 cup unsweetened applesauce (about 225 grams)
- 1 ½ cups peanut flour/powder (about 145 grams)
- Preheat oven to 350. Combine apple sauce and chickpeas in a food processor until completely smooth. Add peanut flour and blend until smooth. Scoop mixture into an 8x8 baking dish that is lined with parchment paper. Spread mixture evenly and sprinkle with cinnamon if desired. Bake for 40 minutes. Let cool completely before slicing and serving.
Totally vegan, completely flourless (and gluten-free!), and super high in plant-based protein. They really are one of the best healthy desserts I’ve ever made!
You know I love blondies, as evidenced by my Vegan Blondie Donut recipe…but these take my admiration of them to the next level. They’re just so dense, fudgy, and creamy tasting!
They’re perfect straight out of the oven or even frozen for a bit so that they are a cold fudgsicle-like texture! You can top them with a sprinkle of cinnamon, a layer of jam, or my favorite….MORE PEANUT BUTTER.
Seriously, you have no excuse not to make these. 3 ingredients, one bowl, and 40 minutes to peanut butter-y heaven right in your own kitchen.
I just ran out of the stash I had in my own freezer and I cannot think of a better way to celebrate National Peanut Day than by baking a batch of these. So my plans are totally set for the big day! Want to join me? 🙂
