I for one LOVE kale, but I think it’s time another veggie got the spotlight. If I had a choice…it would be cauliflower. Yes, it’s been gaining some more fame recently with the rise of cauliflower pizzas and riced cauliflower, but not everyone is convinced yet of it’s greatness.
I am here today to shed some light on all the different ways that cauliflower can be used as a healthy ingredient swap in some of your favorite high-carb recipes. There’s nothing wrong with carbs, of course, but these recipes serve as a great way to mix things up from your standard meat and grain meals.
Cauliflower is incredibly versatile! Not only that, but it’s super nutritious too. The lonely white veggie is often times forgotten in favor of it’s green cruciferous cousin, but it’s got health benefits all its own that should be taken advantage of. Here are just some of it’s star qualities…
+ great source of choline, dietary fiber, omega-3 fatty acids, manganese, phosphorus, and biotin

+ rich in minerals such as potassium and magnesium, and protein
