Almost a week later and I finally “done” moving stuff into my new apartment. (I say done in quotes because I feel like it will be MONTHS before I finally feel done with making this new place my home.) Oh. What’s that? I didn’t mention that I was moving into a new apartment? Well, MY BAD. But it’s official. I no longer live at home and am finally able to support myself without my parents help!

Man does that feel empowering. I’ll be starting grad school soon, running my second marathon, and learning more about how to grow and expand my business. I feel like 2017 is going to be an amazing year full of lots of excitement and new adventures.
Speaking of new, I thought the best way to christen my new apartment and kitchen would be to make something I’ve never made before! No time like the present to try new things, am I right?
Now you’re probably going to laugh or roll your eyes when I reveal what this new to me food is, but hear me out…we all have to have a first time for everything! 😉
Lucky me got a brand spanking new waffle maker for Christmas from one of my relatives and since I’ve never done a waffle recipe on the blog before, I thought it was a great opportunity to do a little experimenting. Fortunately, my first attempt came out wonderful!
Let me clarify though. This is NOT the first time I’ve had waffles! HA! I’m not that much a newb. I’ve had them at restaurants, at other people’s houses, from the toaster, and with those rotating waffle-making contraptions at hotels. This just happened to be the first time I attempted making them myself because I never had the right equipment before!
Not only am I extremely pleased with this first attempt, but I think these may be the BEST gluten-free waffles I’ve ever had. I say this because they legit taste like regular gluten-filled waffles and have that light airy texture that you’d get at iHop or Denny’s. Of course, my version is a lot more wholesome and nutrition than the traditional varieties.
Instead of regular flour I used tigernut flour making these grain-free, gluten-free, and delightfully nutty tasting! They’re also high in protein from the use of your choice of protein powder and egg whites. Talk about a delicious AND satisfying breakfast! Another plus? You get 3 HUGE waffles from this single-serve recipe! Y’all know I like my big portions. 😉
Gluten-Free Tigernut Waffles
- Prep Time: 3 mins
- Cook Time: 5 mins
- Total Time: 8 mins
- Yield: 3 waffles 1x
- 2 tbsp whey protein powder of choice
- 2 tbsp tigernut flour (or coconut flour)
- ½ tsp pysillium husk powder
- ½ tsp baking powder
- ½ tsp cinnamon (or pumpkin pie spice/apple pie spice)
- ½ cup liquid egg whites
- ¼ cup almond or cashew milk
- Whisk all ingredients together. Preheat your waffle maker and spray it generously with cooking spray. Pour a third of the batter into the heated waffle iron and close. Cook until the edges of the waffle maker begin to lift. Repeat with remaining two thirds of the batter.
Top ’em with maple syrup, sliced bananas, and sprinkle of walnuts for a yummy, sweet breakfast that is low in sugar and carbs, high in protein, and total texture heaven. I also love warming up frozen fruit to pour on top for a no sugar added syrup-like option! Frozen blueberries work the best in my opinion!
So how were your holidays, folks? Mine were super busy with the move, but so full of love and family time since my relatives helped me the entire time with the transition. Overall, I am just feeling very grateful right now. Grateful for self-sufficiency, grateful for supportive people in my life, and grateful for….WAFFLES. Yes, it’s totally okay to be grateful for food!
