Going through my recipe page the other day, I noticed how few blueberry recipes I have! I’ve got apples, bananas, peaches, and all sorts of orange recipes featured prominently…but hardly anything is blueberries.
Sure I have a random Coconut Blueberry Mugcake from back in the day (cringing at the photos here!), but aside from that…not much.
This is surprising because I LOVE blueberries and eat them practically everyday in one of my Power Bowls. I like that they’re sweet but not too sweet ya know? I’m also a big fan of blueberry jam as you know from my Instagram.
How about some quick blueberry facts to celebrate? I always like learning unique things about my favorite foods!
+blueberries are the only ‘naturally’ blue foods in nature
+the chemical anthocyanin present in blueberries is good for your eyesight
+Maine is the #1 producer of blueberries in the whole world
+there are over 50 varieties of blueberries (I feel like I’ve only had one!)
+most blueberry flavored foods contain NO REAL blueberries (shocker!)

+the pale, powder-like protective coating on the skin of blueberries is called “bloom” I (I always thought it was pesticides! LOL)
While I don’t have a pie recipe to share for you, I do have something blueberry filled that’s just as tasty. Blueberry Ginger Granola!
I never thought of pairing these two flavors together, but after seeing a tea in the store of the same combo, I decided to give them a go. Never mind the fact I also had some dried blueberries to use up. 🙂
Vegan, gluten-free, and only sweetened with….BLUEBERRIES! This granola is healthy, tasty, and has a great texture. Slightly crunchy, slightly chewy. The combination of sweet blueberries and zesty, spicy ginger is out of this world!
And if you’re like me and sometimes get a stomach ache from eating too much granola in one sitting, you’re covered with stomach ache-easing ginger right in the granola. More excuse to eat the whole batch at once! HA!
Blueberry Ginger Granola [vegan + gluten-free]
- Prep Time: 5 mins
- Cook Time: 18 mins
- Total Time: 23 mins
- Yield: about 1.5 cups
- Category: Sweet Snacks
- Preheat oven to 350. Mix all ingredients together in a large bowl. Place granola mixture on a parchment paper lined baking sheet. Bake for 10 minutes then stir, return to oven to bake for 5 minutes, stir again, and then bake for a final 3 minutes.
Granola is the best isn’t it? Perfect for snacking on straight off the tray and even better as a topping or with cold, creamy milk! That’s my favorite way to eat it.
So if you can’t find a slice of blueberry pie tomorrow, you can at least dive into a batch of this amazing granola!
