A lightened up, meatless take on classic Sloppy Joes! These “meaty” sandwiches are deliciously comforting yet contain no animal products or gluten. Using cauliflower as the main ingredient as opposed to ground beef makes them high in fiber and low in calories & fat. You won’t miss the meat in this zesty, flavorful meal!
Can you believe Christmas is NEXT WEEK? I know everyone has been saying it since September but seriously, where did this year go? This has been one of the fastest moving years I’ve ever experienced. From start to finish, there really wasn’t any down time it seems. Just non-stop change, ups & downs, and some pretty memorable experiences. And now we’re in the midst of the holidays so of course there is no slowing down at this point!Everyone is busy this time of year. Whether it’s shopping for or making presents, attending holiday parties, visiting family, or taking part in festive activities, your schedule is jam-packed. Not that it’s a bad thing, but it certainly doesn’t leave much time for the little things like taking a moment to yourself, catching up on your favorite TV show, or even cooking a homemade, healthy meal!
People start relying on convenience foods, takeout, or pizza deliveries because they are sick of cooking extravagant holiday meals or because they think just don’t have the time. But what if I told you I have a solution. A quick, healthy meal option that your family will love! Easy to make, simple wholesome ingredients, and perfect for this time of year because it’s a classic COMFORT FOOD.Anybody here like Sloppy Joes? The quintessential staple of childhood in my opinion! I have many memories of big, hearty sandwiches bursting at the crusts with hot, saucy meat crumbles. Most times we ended up eating them open-faced because they were just that stuffed with flavorful filling.
It’s been a long time since I had a sloppy joe (I think I sort of overdosed on them since they were served so often at school!) but I recently got a random craving for one and decided to get a little creative with the classic dish.These aren’t any Sloppy Joes that I created…they’re CAULIFLOWER Sloppy Joes! I know, I know. Crazy right? But hey, if pizza crusts and cookies can be made from the versatile veggie, than why not Sloppy Joes? 😉
With the idea in my head, I ventured off to Walmart to pick up some key ingredients. The thing I remember most about the Sloppy Joes I had as a kid were their rich tomato-y flavor. So I knew that can of diced tomatoes and my No Sweetener Added BBQ Sauce would be key ingredients. Hunt’s has never failed me with their quality canned tomatoes so I grabbed a can of those, as well as some PAM non-stick spray. PAM is my go-to for non-stick sautéing. I’d rather use PAM than oil in a recipe like this since it’s a sandwich filling and would be sort of unappetizing if it were super greasy.
Using ConAgra products like Hunt’s and PAM make meals like this super easy to bring together! It’s nice to be able to go to the store and know you’re getting a quality, affordable products that can be used in a multitude of quick weeknight dinners.Enough chit-chat though…let’s get to the good stuff!
Cauliflower Sloppy Joes
Ingredients (2 servings)
- 2 cups (16 oz) of raw cauliflower, finely chopped after measuring
- 1 batch of No Sweetener Added BBQ Sauce
- 1 garlic clove, finely chopped
- ½ of a white sweet onion, finely chopped
- 1 celery stalk, finely chopped
- ½ of a bell pepper, finely diced
- ½ can of Hunt’s diced tomatoes,
- 1 tbsp tomato paste
- ¼ tsp cumin
- ¼ tsp chili powder
- PAM non-stick cooking spray or olive oil
Spray a medium, heavy-bottomed pan with cooking spray (or add a tbsp of olive oil) and heat on medium high heat. Add the diced onion, pepper, garlic, and celery. Cook, stirring occasionally for about 5 minutes, or until they soft and translucent. Meanwhile, microwave chopped cauliflower for 2:00 until mostly cooked. Add cauliflower to the pot and sprinkle in the cumin and chili powder; cook for an additional 2-3 minutes. Add tomatoes, tomato paste, and BBQ sauce. Stir and reduce heat to low. Cook until everything is mixed together evenly and heated through. Serve with toasted bread or buns of your choice!
This meal is great for any and all types of eaters! Paleo, vegan, gluten-free…doesn’t matter! It’s safe for all these different eating styles and not to mention delicious! Even kids will love it because of its yummy taste and it’s a great way to get them to eat their veggies. You know I’m all about hidden veggies. 😉
I know for a lot of you, Cauliflower Sloppy Joes will be a little out of the ordinary. Trust me though, once you try these you’ll have a new go-to recipe for when you want some nutritious, yet quick after a long or busy day.
