Doughy, soft baked cookies with all the taste of your favorite coffee shop latte. Flavored with freshly brewed Chai tea, these cookies are grain-free, vegan, and paleo-friendly! Pumpkin flour and potato starch replace traditional flour and all the sweetness comes naturally from fruit.
Tea season is in FULL FORCE, my friends!
Our luck finally ran out here in Buffalo, and we were hit with the frigid temperatures our winters are known for. This past Saturday? The high was -4!!!
Unbearable to say the least. On days like that you’ll find me hold up in the house, in front of the space heater (or two!), with several piping hot cups of tea! I’ve shared my favorites before and even filled you in on my epic tea beverage hacks (Hint: if you you’re a coffee and tea lover, this one is for you!). Nothing excites me more than discovering a new variety of tea to try!
Honestly, I could spend HOURS roaming the tea aisle at Target or Wegmans. The flavor options are endless and my favorite brands are always coming out with the most creative combinations. Some of the most unusual I’ve seen lately are from Lipton! Good ol’ Lipton. They’re the company I think of when ever I think of tea.
When I was little my mom used to use their original black tea for my tea parties. Strongly brewed with a bit of soy milk and honey…ahhh the memories. Like my own little tea latte! I still find that combination so comforting.
Lipton’s come a long way since the days of just plain black tea and recently improved their Green tea line and added new flavors to their Black & Herbal tea collections. New formulations, new packaging, and TONS of new flavors! When I saw them at the store I HAD to pick some up. I decided on one flavor from each group (man it was hard to choose!): Orange Passionfruit Jasmine (green), Enticing Chai (black), and Lemon Ginger (herbal).
I couldn’t decide which to try first, but with the memory of my childhood tea parties fresh in my mind, I went with the Chai. WOW. It brought me back. The spices, the subtle sweetness, the bold flavors. Yum.
Upon finishing my mug, I was inspired to recreate that same Chai latte taste that I came to love…but in COOKIE FORM.
Oh yes, my friends. At that moment, Chai Latte Pumpkin Cookies were born. The best of both your favorite coffee shop drinks (Pumpkin Spice and Chai Tea Lattes) all in one delicious baked good. And the perfect accompaniment to a hot mug of tea I might add! 😉
Chai Latte Pumpkin Cookies [grain-free + vegan]
- Prep Time: 5 mins
- Cook Time: 12 mins
- Total Time: 17 mins
- Yield: 9 cookies 1x
- Category: Dessert
- ½ banana (approx. 85 grams)
- 2 tbsp potato starch
- ½ cup pumpkin flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp pumpkin pie spice
- ½ tsp cinnamon
- ½ tsp vanilla bean powder
- ½ cup Lipton Enticing Chai Tea, strongly brewed and cooled
- 1 tsp instant coffee
- 2 tbsp pumpkin puree
- Optional: 3 tbsp of any mix-ins like walnuts, pecans, mini chocolate chips, or dried fruit
- Preheat oven to 375. Blend banana, pumpkin puree, and tea in a food processor. In a separate bowl, combine all dry ingredients. Fold banana mixture into dry ingredients. Stir together until evenly combined. Add walnuts, pecans, dried fruit, chocolate chips, or any other mix-ins you desire at this time. Roll batter into 9 balls and place on a parchment paper lined baking sheet. Lightly press down the cookie balls (with your hand or a fork) to flatten.
- Bake for 12 minutes.
These cookies are grain-free, paleo-friendly, and vegan! They are simply sweetened with the natural sugars in the banana and pumpkin flour and have the most amazing texture. Doughy, dense, and so flavorful.
I love how you can really taste the Chai tea in them. You know you’ve got yourself a high quality tea when it’s flavor comes through in a baked good recipe! Way to go Lipton.
Any tea that passes the baking test is a-okay in my book!
Needless to say, I’ve found my new drink and snack obsession! Chai Tea Latte Pumpkin Cookies paired with Lipton Enticing Chai Tea…a match made in heaven! Who needs Starbucks, anyways?
