Well sadly friends, the Bills did not move on from the first round of the playoffs. I’m sure a lot of other Buffalonians are more heartbroken than me. But after a 17 year drought, I just think it’s cool that they even made the playoffs at all!
With all the excitement over football in town lately, I’ve actually taken a little bit more interest in the sport. I’m usually more of a baseball or hockey gal, but after watching a few Bills games this past month, I’m starting to come around.
In fact, I have even more reason to be excited because this year my parents are hosting their first ever SuperBowl party in their new apartment! I’m invited of course and also on appetizer duty. Of course I’ll be making some old favorite likes Vegan Buffalo Chicken Wing Dip and Vegan Corn Dog Muffins. But I also thought this was the perfect opportunity to come up with something new and creative. You all know how much I love doing that!
With no plan in mind, I headed to my favorite place in the city…Whole Foods Buffalo! They always have everything I need for entertaining and when I check the digital app I was even able to get a little inspiration for what I would create.
I noticed that some of my favorite crackers were on sale. I planned on picking up a box just for regular ol’ snacking, but then I realized how awesome they would be as a coating/breading. Perhaps for some sort of nugget?!
That’s when it hit me! Cheesy Tofu Nuggets!
Forget mini meatballs or burger sliders! Now you can have a game day snack that it deliciously, snack-sized, and 100% plant-based. Even the biggest chicken wing and chicken finger fanatics can get on board with these cheesy bite sized delights.
Cheesy Tofu Nuggets
- Prep Time: 10 mins
- Cook Time: 30 mins
- Total Time: 40 mins
- Yield: 18 nuggets 1x
- Category: Savory Snacks
- 1 container 365 Whole Foods Market brand organic extra-firm tofu
- 1/2 to 3/4 cup vegan mayonnaise
- 1 box of Earth Balance Vegan Cheddar Squares, crumbled into crumbs
- 2 tbsp nutritional yeast
- 2 tsp Italian seasoning
- Drain and press tofu.
- Cut into 1-inch cubes.
- Set out two bowls and one baking sheet lined with parchment paper.
- In the first bowl, place vegan mayonnaise. In second bowl, mix together cracker crumbs, nutritional yeast, and seasoning.
- Preheat the oven to 350.
- Dip a tofu cube and into the first bowl, rolling it around so all sides are covered, but not gloopy.
- Next, roll tofu in the cracker mixture, ensuring all sides are coated. Place baking sheet.
- Repeat until all cubes are covered.
- Bake tofu cubes approximately 25-30 minutes, turning cubes once about halfway through. When done, cubes should be very light golden brown and crispy.
Baked to perfection, these bites are vegan, gluten-free, and high in protein. They’re also way lower in calories and fat than your traditional game day fare.
My parents and I enjoyed the test batch with Franks hot sauce and vegan blue cheese dip for dunking. DELICIOUS!
