Chocolate Day is upon us! Wait, am I the only one who refers to Valentine’s Day as Chocolate Day? Well from the looks of supermarkets, drug stores, and department stores, I’d say Chocolate Day is pretty darn accurate. Sure, Valentine’s Day is supposed to be for lovey-dovey gestures between partners, but in my world it’s just another excuse to eat ALL THE CHOCOLATE.Stores start rolling out the goodies as soon as the lock strikes 12 on January 1st and keep pumping up this “Hallmark Holiday” right up until the big day. I’m not the biggest fan of these frivolous types of holidays, but instead of being a hater, I choose to embrace them for the parts I can enjoy. Whether you’re partnered up or single this season, we ALL deserve to treat ourselves to some chocolate deliciousness!
Especially in the form of Chocolate Cherry Mocha Brownie Bites! Long name, major deliciousness.I’ve been trying to hold off on sharing this recipes for a few weeks now since it’s very seasonably appropriate for this time of year. I thought it up at the end of last year, but just never got around to making it because I didn’t have the proper ingredients.When I stumbled across the new Purely Inspired organic protein powder at Walmart. [Side note: I am so impressed with Walmart lately! They’ve been rolling out all sorts of health conscious products…their gluten-free section is banging, they’ve transitioned to carrying a lot of organics, and let’s not forget their great prices.]Purely Inspired protein is a new line of clean, plant-based protein powder that is free of all artificial colors and flavorings. It’s the ONLY USDA approved plant-based protein on the market. Isn’t it crazy that most of the supplements out there haven’t even been tested and reviewed by the FDA? Vegan friends, you now have a great option for organic, AFFORDABLE protein powder (only $19.97 for 1.5 lbs!).In addition to the protein powders, Walmart also started carrying Mission1 protein bars. When I saw flavors like Cookies & Cream and Chocolate Chip Cookie Dough, I had to try a few. Chocolate is the way to my heart if you couldn’t tell from this post. 😉Just like the Purely Inspired protein, the Mission1 bars are organic, convenient for healthy eating on the go, and PACKED with protein…20-21 grams per bar! They’re made from a quality mix of protein isolates so you know you’re getting a pure, rapidly absorbed boost of protein that’s easy on the stomach.You know my love of making protein packed treats, so you can bet I ripped open the Decadent Chocolate flavor and added it to the snack recipe I was working on. Originally, I intended these to be of the truffle variety. But once I added the rich tasting chocolate protein and tested the mixture, I was immediately hit with thoughts of soft, chewy brownies!
Thus, Chocolate Cherry Mocha Brownie Bites were born!
- 1 cup raw walnuts
- ½ cup raw almonds
- 2 cup of soft dates, pitted and finely chopped
- ¾ cup unsweetened dried cherries
- ½ cup unsweetened cocoa
- 2 tsp instant coffee granules `
- 1 scoop Purely Inspired Decadent Chocolate protein powder (or another chocolate vegan protein powder)
- 2 tbsp. of extra-virgin coconut oil
- ⅛ tsp of sea salt
- Combine nuts in a food processor. Process until finely ground. Add dates, cacao, cherries, extra-virgin coconut oil, and salt. Mix until well combined.
- Shape the brownie dough into small balls.
- Place the bites in the refrigerator for at least 15 minutes to firm up.
- These bites will stay fresh for at least 1 week in an airtight container in the refrigerator.
These are the closest thing you can get to fresh-baked brownies with NO BAKING! They have that dense, fudgy texture of perfectly cooked brownies with slight crunch from the walnuts and nice hints of tartness from the dried cherries. The perfect contrast of tastes and textures.I really could have called these DOUBLE chocolate brownie bites because you get intense chocolate flavor from both the unsweetened cocoa powder and the Purely Inspired protein powder.
One thing I love about working with plant-based protein in no-bake treats is that it’s not as chalky and dry as whey products can be. It blended in perfectly with the other ingredients and made them nice and sturdy so they hold together well.The addition of instant coffee gives these a smooth mocha flavor and even makes them great for a pre-workout munch since they’ve got some caffeine in them. You know you’re gonna have a good sweat session when it starts with chocolate! Brownie bites before and then a Purely Inspired protein shake or Mission1 protein bar afterwards…a perfect pairing of snacks!So, whether you’re flying solo this month & next or are paired off with a special someone, treat yourself to these delectable bites of brownie heaven! Raw, vegan, and packed with protein…dessert doesn’t get any healthier than this. 🙂
