Chocolate Day is upon us! Wait, am I the only one who refers to Valentine’s Day as Chocolate Day? Well from the looks of supermarkets, drug stores, and department stores, I’d say Chocolate Day is pretty darn accurate. I’m not the biggest fan of these frivolous types of holidays, but instead of being a hater, I choose to embrace them for the parts I can enjoy. Whether you’re partnered up or single this season, we ALL deserve to treat ourselves to some chocolate deliciousness!

I thought it up at the end of last year, but just never got around to making it because I didn’t have the proper ingredients.

[Side note: I am so impressed with Walmart lately! They’ve been rolling out all sorts of health conscious products…their gluten-free section is banging, they’ve transitioned to carrying a lot of organics, and let’s not forget their great prices.]
Purely Inspired protein is a new line of clean, plant-based protein powder that is free of all artificial colors and flavorings. It’s the ONLY USDA approved plant-based protein on the market. Isn’t it crazy that most of the supplements out there haven’t even been tested and reviewed by the FDA? Vegan friends, you now have a great option for organic, AFFORDABLE protein powder (only $19.97 for 1.5 lbs!).
In addition to the protein powders, Walmart also started carrying Mission1 protein bars. When I saw flavors like Cookies & Cream and Chocolate Chip Cookie Dough, I had to try a few. Chocolate is the way to my heart if you couldn’t tell from this post. 😉

Originally, I intended these to be of the truffle variety. But once I added the rich tasting chocolate protein and tested the mixture, I was immediately hit with thoughts of soft, chewy brownies!
Thus, Chocolate Cherry Mocha Brownie Bites were born!
Chocolate Cherry Mocha Brownie Bites

Ingredients (24 brownie bites)
- 1 cup raw walnuts
- ½ cup raw almonds
- 2 cup of soft dates, pitted and finely chopped
- ¾ cup unsweetened dried cherries
- ½ cup unsweetened cocoa
- 2 tsp instant coffee granules `
- 1 scoop Purely Inspired Decadent Chocolate protein powder (or another chocolate vegan protein powder)
- 2 tbsp. of extra-virgin coconut oil
- 1/8 tsp of sea salt
Instructions
Combine nuts in a food processor. Process until finely ground. Add dates, cacao, cherries, extra-virgin coconut oil, and salt. Mix until well combined.
Shape the brownie dough into small balls.
Place the bites in the refrigerator for at least 15 minutes to firm up.
These bites will stay fresh for at least 1 week in an airtight container in the refrigerator.
These are the closest thing you can get to fresh-baked brownies with NO BAKING! They have that dense, fudgy texture of perfectly cooked brownies with slight crunch from the walnuts and nice hints of tartness from the dried cherries. One thing I love about working with plant-based protein in no-bake treats is that it’s not as chalky and dry as whey products can be.
