These Cilantro Avocado Flatbreads come together in under 20 minutes and are the perfect foundation to base a weeknight meal around. Tacos, falafels, wraps, gyros…the possibilities are endless!
I gave you part one of an epic meal, plant-based meal on Monday. Well, today, you’re getting part 2!
What’s falafel without something to put it on!?
Luckily, I created some delicious Cilantro Avocado Flatbreads to round out the meal. Now all you need are your toppings of choice and you’re all set with a hearty, healthy, EASY to make meal. You could even do a little food prep and have these for lunches or dinners the whole week through. 🙂
Before we get to the recipe though, let me tell you how these unique flatbreads came to be! It all started with an overripe avocado.
You know that moment, when you’re waiting for an avocado to ripen and you just let it go one day (or even one hour!) too long? Yeah. That’s exactly what happened. I was super bummed as I had big plans for that little green guy.
So what was I to do? Well, usually when an avocado gets overripe in the Healthy Helper household, it gets turned into my mom’s famous gaucamole! 3 avocados, cilantro, red onion, salt and pepper, lime juice, and a few splashes of Frank’s Hot Sauce. Simple perfection!
Unfortunately we only had one avocado and I didn’t want to make a batch of guac that wouldn’t even satisfy me enough for a snack! (When we make guac, it’s gone in minutes 😉 ) So I got my (figurative) chef’s hat on and headed to the kitchen to brainstorm.
When I realized we had all the ingredients for guac anyways, I went ahead and used them to inspire my new recipe. A little flour, some spices and herbs, and that creamy avocado…soon enough I had the most perfect dough I could make! Usually at this point I’d go for baking. Maybe some kind of crackers or pitas? But then I saw the coconut oil staring at my on the counter and decided to try my hand at frying some flatbreads. I had seen tortillas made like this before, so why not try it for thick, doughy flatbreads?

Cilantro Avocado Flatbread
- Prep Time: 10 mins
- Cook Time: 6 mins
- Total Time: 16 mins
- Yield: 4 flatbreads
- Category: savory snacks
- ¾ cup +1 tbsp whole-wheat pastry flour
- 1 tsp coriander
- 1 tsp baking powder
- ½ tsp salt
- ¼ tsp baking soda
- ½ ripe avocado
- 1/8 cup cilantro, chopped
- 1 tbsp lime juice
- 4 tbsp soy milk
- coconut oil, for frying
- In a food processor, combine avocado, cilantro, soy milk, and lime juice until smooth. In a separate bowl, sift together ¾ cup of flour, salt, baking powder, baking soda, and coriander. Mix wet ingredients into dry ingredients. Add remaining tablespoon of flour. Dough will be slightly sticky at this point. Separate dough into 4 equal balls.
- Sprinkle some flour on a sheet of wax paper and rolls each ball in flour. Press out each ball into a 4 inch, flat round.
- Brush large nonstick skillet generously with coconut oil; heat over medium heat. Working in batches, add dough rounds to skillet; cook until golden brown and puffed, adjusting heat to medium-high as needed to brown evenly, about 3 minutes per side. Transfer flatbreads to a plate and serve warm.
These taste so fresh and delicious! The combination of lime, cilantro, and avocado remind me of summer. So even though these flatbreads are thicker than pitas or tortillas and super doughy, they taste light!
Vegan, whole grain, and made in less than 10 minutes on the stove-top, these are a great option if you’re looking to change things up from your usual sliced bread.
