I don’t always have time for fancy breakfast but when I do, I make waffles!
I bought a waffle maker about a year ago and have been using it non-stop, but sometimes when I’m in a rush in the morning, making homemade waffle batter from scratch just isn’t an option.
But with the help of Bob’s Red Mill new Homestyle Pancake and Waffle Mix, making delicious, fresh waffles is easier than ever.

Another reason I like this particular mix? It makes EXTRA crispy waffles! Usually when you add mix-ins to to a waffle batter, the waffles come out sort of soft and undercooked…but not with this new mix from Bob’s. I was so impressed with the crispness of these waffles and the fluffy inside texture. Perfect waffles in my opinion!
The package instructions call for adding oil in addition to the water for waffles, but I didn’t add any oil and they still came out great.
I jazzed mine up with the addition of pears, walnuts, cinnamon, and homemade blueberry syrup for a fruity breakfast that tastes like dessert. Definitely a winner for a fun weekend breakfast or brunch! The whole family will love these.
Cinnamon Pear Waffles with Homemade Blueberry Syrup and Walnuts
- Prep Time: 5 minutes
- Cook Time: 8 minutes
- Total Time: 13 minutes
- Yield: 1 serving 1x

½ cup water
½ cup walnuts, chopped
½ green Bartlett pear, finely chopped
½ tsp cinnamon
¾ cup fresh or frozen blueberries
1 tbsp maple syrup
Turn on waffle maker and let it heat up for at least 5 minutes.
Mix the batter ingredients in a measuring cup or another cup you can easily pour from. Once waffle maker is heated, spray with cooking spray. Pour half the batter in the waffle maker, close the maker, and flip it (if your maker is one that flips (I recommend this waffle maker). Put the timer on for 4 minutes. Repeat with remaining batter when the first waffle is done.
While waffles are cooking, microwave blueberries for 1 to 1.5 minutes. Mash the blueberries with a fork and stir in maple syrup. Let the mixture sit for a few minutes to thicken.
Once waffles are done, pour the syrup over them and top with more crushed walnuts if desired.

The possibilities are endless with this new mix from Bob’s Red Mill! Even if you want to keep things simple and prepare the mix without any mix-ins, it still makes absolutely delicious pancakes and waffles. But if you do want to get a little creative, here are some other additions you could try:
- sliced bananas and slivered almonds
- sliced strawberries and chia seeds
- fresh blueberries and chopped pecans
- pomegranate arils and crushed pistachios
- cocoa powder mixed in and homemade raspberry syrup
- chopped apples and crushed walnuts
- chocolate chips or cacao nibs and sliced banana
